Chicken legs with tomatoes and mozzarella

Wash the chicken or turkey. We soak the meat (minimum 12 hours) in a mixture of: 2 tablespoons of oil, 4 cloves of crushed garlic and a teaspoon of dried thyme, salt and pepper to taste.

Grease a pan with 2 tablespoons of oil, place the chicken and add 1/2 glass of water (150 ml of water). Fry the meat in the oven for 30-35 minutes (the meat must be turned after 20 minutes).

After the meat is almost tender, place slices of tomatoes and mozzarella on it alternately. Cut the slices thick enough (0.5 cm). Sprinkle 1/2 teaspoon dried bucuioc. Put the tray in the oven for another 10 minutes. It can be served with salad or just like that.

Wash the tomatoes, cut them into four, remove the seeds and the stalk, and cut the pulp into small cubes. Add the mozzarella, after it has been cut into small cubes.

Peel the onion and garlic, then chop finely. Wash the basil and dry. Remove the thick stems and chop. Then break the eggs and mix with the milk. Add salt and pepper.

Prepare two omelets, and thus use half of the ingredients for each omelet. Fry the onion and garlic cubes in oil, then sprinkle with basil and fry a little more.

Mix eggs with tomatoes, and half of the amount will be poured into the pan. Spread evenly and leave on the fire for 5 minutes. Add the mozzarella and cook for a few more minutes.

Remove the omelette and fry on the other side, then cook for another 3 minutes.


I know that you are familiar with the Parmigiana chicken, but here I propose a simplified way to prepare this particularly tasty recipe, for which you only need a baking tray and the above ingredients :).

Preheat the oven to 250 degrees Celsius (500F). In a small bowl, mix the oil, garlic and half a teaspoon of salt. Put 2 tablespoons of this mixture in another bowl, to which you add the tomatoes, oregano and paprika.

Lightly beat the chicken breasts and grease with the remaining oil mixed with garlic.

Put 250 gr of grated Parmesan cheese on a large plate and pass one part of each breast through the cheese. Place the breasts on a baking tray, with the cheese side up. Put the tomatoes in the same tray and put them in the oven for 10 minutes.

Remove the tray, place the mozzarella slices over the chicken and bake again until the cheese melts.

Put the tomatoes over the chicken, sprinkle with the remaining Parmesan and parsley, then serve (with or without the garnish you want).
