RECIPE PREPARATION Mini apple pancakes:

First we prepare the sheets.

Heat the water together with the oil and the vinegar does not have to be hot, just warm.

In a bowl sift the flour and mix it with the salt. Start kneading, adding water with oil and vinegar, little by little, until you form a suitable dough. It should not be hard but not soft. Add more flour or a little water for a suitable consistency. Knead it well for a few minutes and put it in a bowl to rest.

Cover it with a kitchen towel or cling film, leaving the exposed part to let out the moisture that forms. Let it rest for about an hour, so it will be easy to spread and you will be able to get fine and thin sheets. .

After an hour, sprinkle the flour on the worktop and divide the dough into two pieces. Spread each piece with a rolling pin in sheets of about 50 × 70 cm, sprinkling the flour when needed so that it does not stick.

For beginners it would be preferable for the dough to be divided into 4 pieces, smaller sheets will come out and easy to spread.

If you like extremely thin sheets you can make them bigger, the dough is very elastic and you can get bigger sheets.

While the dough is resting, wash the apples and put them on the grater with large holes.

I stretched two sheets of 50 x 70 cm. I divided the grated apples evenly on both sheets. I sprinkled 3 tablespoons of sugar on each sheet and two tablespoons of oil.

If you like, you can also sprinkle cinnamon and ground nuts, they will give the pie a special taste and aroma.

I rolled and divided the obtained piece into two rolls of 35 cm each that I put in the tray lined with baking paper.

I cut the rolls into pieces and baked the pie for 40-45 minutes at 180 ° C. When it cooled, I sprinkled powdered sugar. Enjoy!

Pancakes with caramelized apples

Sift the flour into a bowl. Form a fountain in the center. Mix the milk and eggs in a bowl. Add the milk mixture to the flour, stirring constantly until smooth. Stir in the butter. Cover with plastic wrap and let stand in the refrigerator for 30 minutes.

Add 2 tablespoons of dough and stir the pan circularly so that the dough covers the entire base. Cook for 2-3 minutes until the edges begin to wrinkle. Turn and bake the other side for 1-2 minutes or until browned. Transfer the pancake to a plate and cover with a clean kitchen towel to keep it warm. Repeat the process 13 times, using the remaining butter and dough, reheating the pan each time.

Fold the pancakes in four. Divide them on serving plates. Cover them with caramelized apples. Serve with ice cream

I have been preparing it for many years, I think it is two decades, if not more.
Over time I tried it in many variants, with a semolina part, a flour part, with a crumb part and a flour part, with caramelized apples, etc.
This time I chose a simple option, because I'm still testing the Panini MakerBeville device, which I talked about in previous posts.
They came out very good and fragrant.

Let the bowl cool, covering the cream with a foil so as not to catch the crust on the surface.
After cooling, mix the cream with the mascarpone, vanilla sugar and essence and fill the pancakes with it.
