WITH POTATOES&mdashOR NOT

We love adding a couple potatoes onto the sheet tray with the squash to give the soup an extra creamy texture and more body. But if you'd rather stay away from potatoes, that's totally fine. This soup will work without them!

You simply roast the squash with a couple diced potatoes until tender. (You can totally skip the potatoes but we love the starchy creaminess that they give the texture.) While those are roasting, you can start sautéing aromatics: onion, celery, and carrot. Then add your squash and potatoes and chicken broth and use an immersion blender to blend it up!

BUILD YOUR BASE

Most good soup recipes start with you sautéing aromatics for flavor. This recipe calls for a classic mirepoix: onion, celery, and carrots that will give it a ton of flavor.

ADD YOUR HERBS

We love thyme in this soup because&mdashhello, fall!&mdashbut you can use whatever kind you want. Rosemary or sage would be delicious, but even Italian seasoning or dried oregano would work here, too.

BLEND IT UP

The conundrum of how to blend up a creamy soup is legit. An immersion blender makes it easiest. The stick blender allows you to just blend up the soup right in the pot! If you don't have one, you can also use a regular blender, just be sure to be careful when blending up the hot liquid (don't burn yourself!). We like to transfer it in batches so it's not so much liquid that the top of your blender flies off (scary, but true).

SLOW COOK IT

If you prefer to use a slow cooker you could put the raw squash and potatoes in with the other ingredients and cook on low for 6-8 hours or high for 2-3 hours. Once the squash is tender, blend with your immersion blender and serve!

Potatoes. The starch in potatoes helps thicken the soup. If you want to keep things sweet, though, you can use sweet potatoes instead.

Chicken Stock. Vegetable broth works, too.

Salt and Pepper. Salt and pepper are added at the end of cooking. Don&rsquot skip out this step! You&rsquoll be amazed by how much flavor these two add to the soup.

With winter weather approaching, I wanted to perfect butternut squash soup that was not only easy to make but also incredibly delicious.

After a few trial runs, I reached the perfect intersection of minimal effort and maximum flavor. Let us show you how easy it is to make this seriously dreamy butternut squash soup that’s perfect for the holidays and beyond.

Once the flavors have melded together, the soup is puréed to a creamy and luxurious texture.

And optionally, for a contrast of textures, we like topping it with croutons (gluten-free as needed) and/or toasted pumpkin seeds.

In fact, you can skip the cutting and chopping by using fresh or frozen pre-diced butternut squash. If you want to save time and effort, I definitely recommend buying fresh or frozen, pre-diced butternut squash to use in this recipe.

If you do use pre-diced squash, skip step one of the recipe and add the butternut squash dices to the boiling broth. When they are soft, blend them with an immersion blender.

Fold raisins and walnuts into the batter.

Spoon batter into prepared muffin cups to about 1/2 to 2/3 full.

This easy acorn squash soup recipe is made with roasted acorn squash, carrots, celery, and cauliflower and blended with fresh garlic, ginger, and a touch of ground cinnamon for a cozy and delicious soup perfect for cold weather.


What You Need To Make Butternut Squash Soup

  • 1 large butternut squash (I mean, obviously)
  • 1 32 oz box of chicken broth (I used Swanson)
  • 1 large onion
  • 1 tsp minced garlic
  • 4 tbs salted butter
  • 1/4 pint heavy whipping cream
  • 1 tsp pumpkin pie spice (I used Watkins Pumpkin Spice blend (cinnamon, ginger, nutmeg, allspice) and got it at Walmart)
  • 1 tsp salt
  • 2 tbs brown sugar
  • dried cranberries for garnish


How to cut Butternut Squash for baking:

  • Wash butternut squash
  • Lay on its side on a large sturdy cutting board
  • Use a sharp chefs knife
  • Cut off the entire stem end about 1/2 inch
  • Cut off bottom end about 1/2 inch
  • Slice in half the long way
  • Scoop out pulp and seeds with a spoon and discard

Now you are ready to prepare your butternut squash the preferred way that you like. For this recipe I recommend to bake in halfs and then cut afterwards. It’s hard to cut through the tough skin of the butternut squash so I chose not to. If you want to cut it in cubes then you can pop in the microwave for 5 minutes to soften the tough skin.

Step by Step Directions for Easy Butternut Squash Soup:

  • Preheat oven to 375.
  • Line cooking sheet with parchment paper
  • Put butternut squash, onions and garlic on baking sheet and season with oilve oil, salt and pepper
  • Bake for 30 minutes or until cooked through
  • Scoop out butternut squash and mix well with garlic and onion
  • Move all vegetable ingredients to a Vitamix blender OR use an immersion blender in a large pot
  • Add vegetable broth or coconut milk
  • Blend until smooth and be sure garlic is all blended
  • Transfer to stovetop and heat thoroughly
  • Season and garnish to taste
  • Pour into bowls and serve with mini toast.
