Because I had been craving some cheeses for some time, I said not to miss the opportunity to leave the cheese for a century and to make a portion. They came out exactly as I wanted: fluffy and a little salty.

  • 1 kg of white flour
  • 40 gr of fresh yeast
  • 250 ml of milk
  • 250 ml of mineral water
  • 1 teaspoon with a pinch of salt
  • 1 teaspoon grated sugar
  • 100 ml oil + for greasing the tray and the cheeses
  • 5 whole eggs + 1 for greased
  • 300 gr salted sheep cheese + for shaving on top

Preparation time: less than 120 minutes

RECIPE PREPARATION Cheese:

In a bowl sift the flour and make a hole in the middle in which we will put 3 whole eggs and salt. Heat the milk on the fire, then add mineral water so as to obtain a warm liquid. In a cup put the yeast, sugar and add a little warm liquid, pour the dissolved yeast over the eggs, then slowly pour the milk with soda and knead until no more. cling to hands. At the end, add the oil and knead the dough well. Cover the bowl with a towel and leave it warm until it doubles in volume. Meanwhile, grate the cheese on a small grater and mix it with 2 eggs. Grease a higher tray with oil, both the bottom and the walls. Put a little oil in a bowl, with which we will grease our hands before breaking the dough. Break the pieces of dough as evenly as possible, spread them in your hand, and in the middle put a teaspoon on top of the egg cheese composition. Bring the edges of the dough to the middle, covering the cheese and place each cheese in the tray. Cover the tray with a towel and leave it warm until the cheeses grow again. Beat an egg with which we will grease the cheeses, then grate the cheese on top. Put the tray in the oven until they are nicely browned. Let the cheeses cool a little, then we will detach them easily.

Yeast dough for pan-fried cheeses

Mix all the ingredients (except the oil) in a bowl and knead a soft dough for 5 minutes with the robot or 10 minutes by hand. Depending on the quality of the flour, we recommend starting with 300 ml of lukewarm milk water and seeing along the way if you need another 50 ml. Add the oil and continue kneading for another 3-5 minutes.

Gather the dough from the bowl into a ball (with your palms greased with oil) and cover with plastic wrap. Leave to rise until it doubles in volume for 45-60 minutes (depending on how hot it is in the kitchen).

If you want to prepare cheeses, you need flour, cheese, sugar and yeast. The recipe is very good and easy to prepare. After weighing the flour, sift it into the bowl. Then, in a larger glass, break up the 2 cubes of yeast, put a tablespoon of the amount of sugar and 2 tablespoons of warm milk, then put the mayonnaise in the middle of the flour, in a pre-made crater. After 5-10 minutes the mayo will bubble. Then over the mayonnaise and flour from the bowl we add whole eggs, milk, sugar, vanilla sugar, salt powder, we don't put the oil yet. Put the wooden spoon in operation and start mixing when they are homogenized in the bowl, add the oil, stirring constantly. If the dough sticks to the bowl, start adding more flour, but a little and stir all the time.

Next stage: kneading

You need to get a malleable, non-sticky dough, which when you press with your finger it should recover. Don't be tempted to add more flour, just to make it easier to knead, so be careful. To make it easier, put the dough on the table on which you sprinkled the flour and knead it (grease your hands with oil when you knead it, it's easier!). After kneading it, put the dough in a bowl and leave it in a warm place for at least 30-40 minutes (I put it in the hot oven at 35 degrees).
As the dough grows, we take care of the filling.
In a bowl put the cheese, sugar, semolina, grated lemon peel, and egg yolks. We start to pass with a fork. Add the beaten egg whites with a wooden spoon. Beat the beaten egg whites lightly with a spoon, if you want, add raisins. Then the prepared filling, set it aside and look at the dough in the bowl, see what level it has reached. Do not knead the dough again, there is no need. Spread the dough on the table (lightly floured), in a sheet. The dough should be about 1/2 cm high. Cut into equal squares. The folding technique is simple: put a tablespoon of cheese inside, and then join the corners, like a letter. After folding the cheeses, leave them outside, somewhere warm, for about 20-25 minutes, so that they grow a little more, so they will bubble more in the oven. Grease them with an egg yolk mixed with about 3-4 tablespoons of milk and put them in the oven at 175 degrees, in the middle of the oven, for 30-35 min.

Ingredients for the cheese recipe

About 35 pieces come out of these quantities

  • 2 sachets of vanilla sugar
  • grated lemon peel
  • 1/2 kg of sweet cheese
  • raisins
  • sugar to taste
  • 2 eggs

How do we make cheeses?

Rub the yeast with a little sugar until liquefied and then add a little more flour (1 teaspoon) and about 60 ml of warm milk. Heat the milk separately and add the butter to melt. Rub the yolks well with sugar. Put flour in a bowl, add warm milk, yeast, egg yolk mixture with sugar and vanilla sugar. Then knead a softer dough, until it comes off the bowl (if necessary add warm milk) and leave to rise for an hour.

Divide into 2 and spread out a sheet that is cut into squares.
The cheese is mixed with raisins, lemon peel, eggs and sugar (I also put 2 sachets of vanilla sugar).

Fold the dough according to the following method:

Place the filling in the middle of each square then gather the corners in the same way as in an envelope, pressing firmly on the last one so that it does not fall apart during baking.

Let it rise in the pan for 15 minutes then grease it with egg yolk mixed with a little oil and bake for 15-20 minutes in the oven heated to 180 degrees Celsius.

Grow on the edges with a knife, put the filling in the middle and then weave the edges one by one.

Preparation Homemade cheese

For the dough, mix the sugar with the yeast and lukewarm milk. Then gradually add the egg yolks, butter at room temperature and grated lemon peel and mix with a little flour. Then add salt and the rest of the flour and knead the dough. Leave to rise until doubled.

Drain the cottage cheese, mix with the rest of the ingredients and finally add the semolina. The amount of semolina differs depending on how watery the cheese is. If it is more watery, put more, if not, you can give up semolina or you can put very little. Finally, the raisins are added. A little salt and the aromas of vanilla and grated lemon peel should not be missing from this composition! Without these, some faded cheeses come out. Raisins should not be soaked as they will swell when baked by absorbing excess whey from the cheese.

Preparation of cheeses

After the dough is spread, cut it into 12 pieces. The cheese composition is placed on each square with a spoon, so that the weights are somewhat equal.

The cheeses close like an envelope. The first corner is placed over the filling and greased with beaten egg, the opposite corner is also lifted and greased with egg and then the same two. The beaten egg is the "glue" of these tasty envelopes. If the corners are not greased, the cheeses will open when baked.

The stuffed cheeses are placed in the tray (on baking paper) and greased well on the outside with beaten egg.

Bake for 10 minutes at 180 ° and for another 10 minutes at 160 °. The oven must be well heated before baking.
