Green apple sorbet, together with lemon sorbet, is the dessert usually used at weddings to separate meat and fish dishes. And in fact it is precisely at a wedding of a couple of friends that I tasted it for the first time a few years ago and since then I have always had the passion to make it at home. Well this year I decided, a successful experiment, with a fresh and pungent taste, the green apple sorbet it is an excellent after-meal, but also a perfect dessert to be served to cool off during the hot and sultry summer days.
To make my sorbet I used the ice cream maker and I admit that the result was better than the other times when I used the technique of breaking ice crystals every hour, but if you don't have it, nothing prevents you from doing it this way, it's a bit more laborious but still valid;) I'll leave you with the recipe and wish you a sweet afternoon: *

How to make green apple sorbet

Wash and clean the apple and cut it into cubes.

Put the apple pieces in a container with water, sugar and lemon juice and blend (I used the blender, but you can also use a mixer if you prefer).

Transfer the mixture to the ice cream maker and operate it according to the settings (with mine: 10 minutes at speed 2).
If you do not have an ice cream maker, pour the mixture into a tray, place in the freezer and break the ice crystals with a fork or blender every 30-40 minutes (it will take at least 4-6 hours).

The green apple sorbet is ready, serve it immediately or keep it in the freezer.

To prepare it you need to provide yourself with the following ingrediants:

-500 g of apples granny smith
-150 g of sugar
- the juice of the middle lemon
- & frac12 liter of water.


Start by putting the water in a saucepan with the sugar, melt the sugar and remove the saucepan from the heat. It is important to let everything cool down. After doing this, peel and blend the apples and add the lemon juice. Add the sugared water and put everything in the freezer. It is necessary, for a good density of the sorbet, to turn the first time after about 4 hours and then for at least 5 times every hour. A tip to follow, for optimal aesthetics, is to pass the entire mixture to the mixer and then serve it all in champagne glasses with a slice of apple resting on the edge of the glass.

Ingrediants for 4 people (about 700 g of green apple sorbet)

  • 500 g Granny Smith green apple pulp (about 4 apples)
  • 140 g of sugar
  • 250 ml of water
  • 1 lemon wedge
  • To garnish: a few fresh mint leaves

Method (preparation: 20 min. + rest)

To prepare the green apple sorbet, with or without an ice cream maker, the first thing to do is dissolve the sugar in the water on the stove (1). There is no need to bring it to a boil, it is enough that the sugar crystals are no longer visible. Let it cool and keep it in the coldest part of the refrigerator for at least 2 hours (you can also do this the day before). If you decide to serve the green apple sorbet in apple shells, instead of peeling and cutting the apple into wedges to obtain the pulp, proceed as follows: cut the cap of the green apple (2) and rub it immediately inside with a wedge of lemon, so that it does not blacken. With a sharp knife cut the apple pulp a few millimeters from the peel (3).

With a digger or with a teaspoon, start digging the apple to its full depth (4), leaving only a few millimeters of pulp attached to the peel (5). Rub the inside of the apple thus obtained with a lemon wedge, again to keep it from blackening (6).

Once ready, you can keep the apple shells with their lid in the freezer. Take the pulp you got from the apples and remove the cores and seeds (7). Put the pulp in a mixer and add the water in which you dissolved the sugar (8). Blend for about a minute, until you get a homogeneous mixture (9).

At this point, if you have an ice cream maker, pour the mixture while it is running (10) and let it go for about 30 minutes (or the time indicated in the instructions of the ice cream maker itself) (11). When the green apple sorbet has taken on a firm consistency and comes off the edges, it will be ready (12).

Without ice cream maker: pour the mixture into a tray, preferably made of steel, cover it and put it in the freezer. After half an hour, take it out of the freezer and mix thoroughly, put it back in the freezer and repeat the mixing operation 5-6 more times, 30 minutes later. Serve the green apple sorbet inside the apple shells or in ice cream cups, garnished with a few mint leaves.

advise: as mentioned, home freezers are not really suitable for storing sorbets and ice creams. After many hours that the green apple sorbet remains in the freezer it tends to freeze in a single block, in this case it is sufficient to take it out 5-10 minutes before consuming it to make it return to the right consistency.
