Potluck Chopped Salad

This recipe is from chef Yia Vang at Union Hmong Kitchen in Minneapolis. This style of salad is a staple of Hmong potlucks. It was one of the first things that new Hmong immigrants to the Midwest learned to make from the families who sponsored them in the 1980s and ’90s.

Ingredients

  • 1 garlic clove, finely grated
  • ¼ tsp. Aji-No-Moto umami seasoning (MSG; optional)
  • 1 romaine heart, quartered lengthwise, cut crosswise into 1" pieces
  • 1 small carrot, peeled, cut into matchsticks
  • 1 medium radish (such as watermelon or black), cut into quarters through root end, thinly sliced
  • 1½ cups mixed tender herb leaves (such as Thai basil, cilantro, dill and/or mint)

Recipe Preparation

  • Bring a medium pot of water to a boil. Carefully lower eggs into water with a slotted spoon and cook 8 minutes. Transfer eggs to a bowl of ice water and let cool. Remove eggs from ice water, pat dry, and peel. Slice eggs crosswise and set aside for serving.

  • Whisk garlic, buttermilk, mayonnaise, dill, and Aji-No-Moto seasoning (if using) in a large bowl to combine; season with salt and pepper. Add romaine, carrot, radish, and herbs and toss to coat; season with salt.

  • To serve, tuck egg slices in and around salad.

Betty’s Couscous Salad

Betty didn’t specify how much couscous to cook , or how much feta to add for her delicious version of this salad, so I just wing it…

  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 clove garlic, crushed/minced
  • 2 tbsp snipped fresh dill
  • 1/2 tsp dried oregano
  • salt
  • pepper

Whisk all ingredients together, or shake up in a jar.

  • 2 ripe tomatoes, cut into small pieces
  • 1 cucumber, unpeeled and cut into small pieces
  • red onion, sliced (to taste)
  • black olives, to taste
  • feta cheese, crumbled or cut up
  1. Cook the couscous, stir, and set aside to cool (follow the directions on the box) whole wheat is my preference.
  2. Combine the salad ingredients in a bowl.
  3. Add the dressing to the vegetables and toss.
  4. Add the couscous to the vegetables, toss. Just before serving, gently stir in the feta cheese.

Potluck Asian Chicken Cabbage Salad

I had cabbage and radishes aplenty when informed of the impending opportunity to use up farm share veggies pot luck. Following my tip to stick with the familiar, from my post Five Tips to Feed Your Family From the Farm Share, I decided to make a chicken & cabbage salad with an Asian dressing. The guests did not include vegetarians or folks with nut allergies, so I felt comfortable making my usual recipe which comes from the Better Homes & Gardens New Cookbook (Amazon affiliate link).

I've tweaked this recipe in a few ways, shown below. First off, I added salad greens since I'm serving a crowd. Second, I added radishes since I had some, I thought they'd look pretty, and the extra crunch would go well. Third, I used seasoned rice vinegar (the kind I use for my sushi rice) and, since that is sweetened, I omit the sugar. I double the dressing since it's so good--and so easy to make. Method-wise, I change the recipe by tossing the chicken-cabbage mixture with the dressing and let it hang out for a few hours. Then I toss the whole lot together with a bit more dressing and it's ready to serve.

Luckily it still tastes good, and enough so that I finished it off and immediately made a second batch that was much prettier to photograph.

So again, balsamic is for DRIZZLING.

Also, when I was reading other's recipes about this chopped Caprese salad, many of them had (in my opinion) way too much oil and vinegar added.

I only used 2 Tablespoons olive oil and 1 Tablespoon balsamic vinegar. One recipe called for 1/4 cup balsamic alone, which I started to do in the first batch but realized it was drowning in brown liquid.

I'd recommend to start small with the oil and vinegar. You can always add more later!
