  1. In a large bowl, add peas and onion then cover with water. Cook in the microwave for 6-7 minutes. Drain in a sieve or colander, return to bowl then stir in butter, salt, pepper and garlic powder.

Sautéed peas with onions (and bacon) is a delicious side dish and great for entertaining. Omit the bacon for a still-delicious vegan version.

Ingredients

  • 2-½ Tablespoons Olive Oil (if Using Bacon, Only Use 1 Tablespoon Of Oil)
  • 5 strips Bacon (optional), Cut Into 1/2-inch Pieces
  • 1 whole Large Vidalia Onion, Or Double The Amount If Using Medium Yellow Or White Onions, Sliced
  • 16 ounces, weight Frozen Baby Peas
  • ½ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 2 dashes Red Pepper Flakes, Up To Double This Amount, If Desired

Preparation

If using the bacon: In a large, non-stick skillet over medium-high heat, heat a drop of oil and add the bacon to the pan. Partially cook the bacon on medium high, until the bacon grease is released.

Add the onions and the rest of the tablespoon of olive oil to the pan and stir to mix with the bacon. Cook, stirring occasionally, until onions are soft and golden (about 10 minutes).

Add the frozen peas, salt and black pepper to the pan and stir together. Cover and cook on low, stirring occasionally, for 25-30 minutes, or until peas are cooked to your liking. Taste peas and stir in red pepper flakes as needed before serving.

For the meatless version: Heat the full amount of olive oil in a large, non-stick skillet over medium-high heat. Then add the onions, and cook them stirring occasionally, until they are soft and golden (about 10 minutes).

Her allure and charm weren&rsquot cut out from her Sunday night quick fires. Everything she made was authentic, such as spinach fritters, chicken and olives, or crabs and spaghetti, but it was fast, quick, earthy and a bit sexy, always hitting the senses with a surprise.

Ingredients & substitutes

Rice: Usually basmati rice is used to make any rice pulao. So this matar pulao is also made with the same. But any other premium quality rice can also be used. Jasmine rice or Sona masuri rice also works well.

Ensure you use aged rice so your matar pulao don&rsquot become mushy or sticky. Avoid using sticky rice or rice that tends to get mushy after cooking.

Green peas: Fresh or frozen peas can be used to make matar pulao. If the green peas are mature and are harder (not tender or young), then you can precook them for 2 to 3 minutes in a pot. Drain and use them in the recipe. This is only if you are using basmati rice.

This recipe is best made with fresh or frozen peas but dried peas work but the flavour won&rsquot be the same. To use them check the tips below.

Fresh herbs: Mint leaves (pudina) enhance the flavour of matar pulao. If you do not have skip them or use the same amount of coriander leaves to garnish at the end.

Whole spices: Use good quality whole spices that are within the shelf period otherwise they impart a bitter taste and flavour to the dish. Star anise, bay leaf, cumin (or shahi jeera), cardamoms, cinnamon and cloves are used.

Other spices like black cardamoms, a single strand of mace & a pinch of nutmeg can also be used. Replacing the whole spices with ground spices won&rsquot give the same flavor to the peas pulao.

Water: Adjust the water quantity as needed depending on the kind of rice used & the cooking method adapted by you. The water quantities I have mentioned work well for aged basmati rice.

If using any other kind, use the same amount of water as you would use to cook plain rice.


Pea Salad Recipe

Separately these ingredients are delicious but together they make a perfect side dish that will compliment all your upcoming meals!

This cold dish is fantastic to be served with fried chicken, BBQ, grilled meats or even just have in a bowl as a main dish (which is what I do).

Here is what you need to gather to get started:

  • frozen peas
  • bacon
  • shredded cheddar cheese
  • shredded mozzarella cheese
  • diced red onion
  • 1 cup real mayonnaise (I Only use Hellmann’s but you can use Miracle Whip if that is your thing)
  • salt and pepper
  • bacon bits optional

Make it Vegetarian: Just remove the bacon!


Preparation

Step 1

Bring milk, cloves, and bay leaf to a boil in a small saucepan reduce heat to low and simmer for 15 minutes to let flavors meld. Strain into a medium bowl discard solids. Cover milk and keep warm.

Step 2

Meanwhile, place onions in a large skillet (at least 12”). Add water to half-cover the onions (about 1 cup). Add 1 Tbsp. butter, 1 tsp. salt, and sugar. Cook over medium-high heat, stirring occasionally, until liquid has evaporated and onions are golden brown, about 12 minutes. Gently transfer onions to a large plate.

Step 3

Melt remaining 2 Tbsp. butter in same skillet over medium heat add flour and whisk to combine. Cook, stirring occasionally and scraping up browned bits from bottom of pan, for 1 minute. Whisk in reserved milk, adding ¼-cupful at a time. Cook, stirring constantly, until thickened and bubbly. Stir in remaining ½ tsp. salt, pepper, and nutmeg. Add peas and onions stir until heated through. Gently fold in crème fraîche.
