Also known as bean curd, tofu is a brilliant carrier of flavour, plus it’s high in protein, low in saturated fat and a great source of calcium and phosphorus, both of which make for strong and healthy bones. It comes in two different forms – firm or silken – and can be used in all sorts of dishes.

This mega salad has its roots in Sundanese cooking, and has now become the typical street food of Jakarta in Indonesia. Gado-gado means medley, which refers to all the different seasonal veg and ingredients used, making it slightly different depending on where you go and the time of year. Tossed with peanut dressing and served with something crunchy on the side it’s a winning combination.

Pad Thai has become a favourite in both street food markets and high-end Thai restaurants, and it’s not hard to see why – it’s ridiculously tasty and seriously satisfying. Packed with proper Thai flavours like dried shrimps, Asian herbs and a beautiful tamarind sauce, it’s fresh and zingy but also hearty and warming – a modern classic.
