THE VEGGIE VERSION
Jamie’s veggie Bolognese ragù is as rich and full of flavour as a meaty version. Made with porcini mushrooms and plump lentils, it’s packed with protein and contains three of your five-a-day.
Starting with finely diced carrots, onion and celery, Gennaro adds an equal mix of minced pork and beef before simmering with a glug of red wine and tomato purée. So good!

LOW AND SLOW
This is a next-level Bolognese that is well worth the time! The tender slow-cooked rabbit is perfectly matched with porcini mushroom, sweet garlic, beer and tomatoes. Beautiful.
RAW VEGAN ‘BOLOGNESE’
Quite unlike your typical Bolognese, this recipe has a lovely rich tomato sauce and you get a satisfying crunch from the walnuts. Ground cauliflower also makes a fun substitute for the standard scattering of Parmesan.
