I thought of celebrating you today with something sweet for fasting: Lent check with bananas and nuts. The recipe is adapted from a vegan site that I still visit from time to time for healthy snack ideas and that I recommend to you as a source of inspiration.

I changed the recipe a bit and used less oil, I replaced it with coconut vegetable cream, but you can also use coconut milk, hazelnut milk, soy milk or any other kind of vegetable milk.


  • 300 g bananas (about 4 well-ripened medium bananas)
  • 180 g flour
  • 75 ml oil
  • 75 ml coconut cream (or peanut milk, soy, etc.)
  • half a cup of brown sugar
  • a teaspoon of vanilla extract
  • a teaspoon of cinnamon
  • a teaspoonful of nutmeg
  • half a cup of chopped walnuts
  • a sachet of baking powder
  • half a teaspoon of baking soda
  • a pinch of salt

Peeled and diced bananas are passed with a fork or blender until a not very fine puree is obtained.

Add coconut oil and cream (or vegetable milk, if you prefer), vanilla and brown sugar over them and mix well with a whisk or mixer.
