I don’t know if it’s the time of year or just my obsession with Mexican food, but Cinco de Mayo is my favorite food holiday of the year, hands down. (I even got married on Cinco de Mayo, although not on purpose — that would have been a little overboard!) As such, I have dozens of Mexican recipes on the site, but none more indispensable than this classic guacamole. You can throw it together in 20 minutes with just a handful of ingredients, and it’s the ticket to wild popularity at any gathering you bring it to.

Perfect guacamole doesn’t have to come from a restaurant! It’s ridiculously easy to make with just a handful of ingredients – all you need is a few limes, a little diced red onion & cilantro, a jalapeño, and, of course, some perfectly ripe avocados. Put everything in a bowl, mix, and mash (but not too much!), and voila! You’ve made THE BEST guacamole in minutes.

How to Make Guacamole

  1. Start by dicing your mix-ins – the best guacamole I know uses red onion, cilantro, and jalapeño for a little heat.
  2. Next, zest one lime, and juice two.
  3. Now you’re ready for the key ingredient: avocados! Slice three in half lengthwise, making one long, oval-shaped cut around the pit. Separate the halves and remove and discard the pits.
  4. Without cutting through the peels, score the avocado flesh into a grid with a knife. Scoop it out of the peels and into a bowl along with the onion, cilantro, jalapeño, lime juice & zest, and salt.
  5. Mash and stir everything together, until the components are well combined but the avocado retains a slightly chunky texture.
  6. Get out the chips, and dig in!

Guacamole Tips

  • Taste and adjust. The key to making great guacamole is making it suit your own taste. Everyone has different guac preferences, so be sure to create something that matches yours! If you like it tangier, add more lime. If you want more spice, toss in extra jalapeño or pickled jalapeños. And always, always salt to taste.
  • Make it just before serving. No one likes brown guacamole, so mix yours up just before serving. It’s so easy, there’s no need to make it ahead. In the unlikely event that you end up with some left over, press a layer of plastic wrap over its surface before sealing it in an airtight container and storing it in the fridge.
  • Use ripe avocados. We all know that avocados can be fickle. The ones you want for perfect guac will be just a hair overripe, with a slight give when you squeeze them. If they’re mushy, they’ve gone too far. If you can’t find ripe avocados at the store, let them ripen on your counter for a few days and transfer them to the fridge when they soften.
  • Try coarse salt. The best guac is chunky guac, and I like chunky salt to go with it. I use flaky Maldon salt in place of my usual fine grain sea salt for extra texture and salty bites. If you don’t have it on hand, that’s ok – regular salt will work just fine.

You’ve made some simple guacamole, but you want to dress it up! Try stirring in any of the following:

  • Roasted jalapeño or poblano peppers
  • Cotija or feta cheese
  • Diced mango or pineapple salsa

What to Serve with Guacamole

Obviously, tortilla chips are a must. But guac is also great with sliced veggies! For more of a meal, try making a DIY fajita or taco bar with mango salsa and guacamole as toppings. Dollop it onto these nachos, serve it alongside baked taquitos, or make a burrito bowl with cauliflower rice. And of course, don’t skip the margaritas!

The Best Way to Keep Guacamole Fresh and Green

At Epicurious, we don't spend much time arguing about politics or sports. No, we argue about other things, like guacamole. Should it be chunky? Should it have cilantro? How much lime juice?

But there's one thing we always agree on: guacamole should never, ever be permitted to turn brown.

Browning is simply an avocado’s chemical defense—when something (like a knife) damages the plant’s cells, the avocado releases phenolics that lead to the color change. But brown guacamole is so unappetizing it may as well be poisoned. So I ran a number of tests to find out which trick keeps guacamole bright and green the longest.

I made eight trials and a control, all from one recipe. At first I set the guacamoles in the fridge overnight, but none showed signs of browning. So that was takeaway number one: keeping guacamole cold keeps it green.

But I wanted to take my guacamole testing even farther. So I set the guacs out at room temperature for almost 20 hours. (Note: nobody should eat guacamole that has been at room temperature for this long.) At the end of this testing period, some methods had completely failed to keep the guacamole green, while other methods yielded guac that was as green as the minute it was made. Below, a list of the winning and losing methods.

The idea here is to top the guacamole with a thin layer of water, which keeps oxygen at bay the water is then tipped off before serving. At the end of testing, this trial showed no browning. But with a result that looks more like gazpacho than chip dip, I still wouldn’t recommend it.

Absorbic acid (or vitamin C) helps in slowing down browning, so if you’re not opposed to a more lime-heavy guacamole, it seems like a pretty foolproof way to keep things green. I found that a squeeze of lime was enough to create a “float” on top, and that kept the guacamole looking just as bright as it did when I mashed it together. Of course, some folks argue against lime juice in guac. But can they argue with science?

Just like the water test, only with grapeseed oil (chosen for its neutral flavor). Lumps in the guacamole that were closer to the surface of the oil turned brown, but for the most part, the guacamole stayed the same bright color. However, much like with the water, I wouldn’t recommend this method because it changes the guacamole’s texture and gives it an oily sheen.

Food scientist Harold McGee swears by plastic wrap as a way to keep out the oxygen. I can’t argue with McGee—pressing plastic wrap flush against the surface preserved the guacamole and kept it looking green throughout the time it sat out during the daytime. The key is pushing the plastic wrap flush—guacamole preservation is all about minimizing the amount of oxygen in contact with the surface, so even a few inches between the surface and loosely wrapped plastic wrap can make a difference.

Real talk: the best way to prevent browning is to make your guacamole right before you plan to eat it.

My colleague Joe suggested wax paper as a covering for guacamole, taking the idea from the way cheesemongers use wax paper for preserving cheese. Just like the plastic wrap, I tried one loose covering and one wax paper circle that I cut to press directly into the surface. After sitting out, the guac with the loose wax paper got brown and slimy. The guac with the flush wax paper circle was better, but it was not as effective as the flush plastic wrap. Conclusion: keep the wax paper for the cheese.

Many, many people on the internet insist that sticking the avocado pit into the bowl of guacamole will keep the guac fresh. I found the opposite to be true: After being left out on the counter all day, the trial with an avocado pit in the center showed a lot of browning. In fact, it was the winner (loser?) of the batches. Entire sections were brown, even more than in the control trial. In short, this method is. the pits.

Now, I don’t claim to be an expert in choux pastry, I don’t even claim to be good at it, to tell you the truth sometimes I have a mini panic attack inside at the thought of having to make this stuff, but what I can claim is that I’m slowly getting better at it. I have done a lot of reading and, more importantly, I have done a lot of (often frustrating!) practice to try and master my little nemesis. 1. Be organised. Have all your ingredients ready, eggs at room temperature, oven preheated and all the equipment ready to go before you start.

2. Dampen your baking paper. Its the steam that helps the choux pastry to rise. That’s why there’s lots of water in the mixture. You can create even more steam by running your baking paper (parchment paper) under a cold tap for a few seconds then shaking off any excess water before lining your baking trays.

3. Don’t over boil your water/butter mixture. Again, we want all that water for steam so don’t let your pot boil for too long, so when the pot comes to the boil, remove it from the heat straight away then add your flour so that you don’t lose water as it evaporates off.

4. “Shoot” the flour. You want to add the flour quickly and all in one go to the boiling water/butter mixture so that it cooks evenly. I picked this next tip up from British baking pro Delia Smith‘s website. Take a piece of baking paper, make a crease down the centre then open in back up. Sift the flour straight onto the paper then use this to tip the flour in with one hand while you are stirring vigorously with the other.

5. Show off your guns! Ensure that you stir vigorously with a wooden spoon (or electric mixer) while you add the flour, then continue to beat until the mixture comes away from the side of the saucepan. This is a bit of work so make sure you bring your muscles for this one! You want to develop the gluten so that you have light pastry, but you also don’t want to overwork it, so when it comes away from the sides, you can stop beating.

6. Add the eggs one at a time. It may look like the mixture is separating, but stick with it and it will turn into a thick glossy paste.

7. Let off some steam. After the choux pastry is cooked, pierce the bottom of each pastry with a skewer or a knife to release the steam that had helped them rise. This helps them to dry out.

8. Leave in the oven to cool. This is a tip from my darling mother. Turn off the oven, leave the door ajar and return the pastries to the oven to allow them to cool there. This dries them out even further.
