Ingredients needed for Quick Apple Cake:

4. We gradually pour melted butter (and cooled) over the egg composition with sugar and stir continuously until smooth. We also add lemon juice.

5. In a separate bowl, mix flour with baking powder. add slowly a tablespoon of flour in the liquid composition and mix well after each spoon added. At the end, we add the teaspoon of cinnamon.

6. add the milk and homogenize. The consistency we follow is similar to a thicker cream. We take a high tray and line it with baking paper.

Now that we're done mixing the ingredients, we can cut the apples. It is good not to cut them from the beginning, because they will oxidize and take on a brown color. Another option is to sprinkle them with a little lemon juice after you cut them. This way they will stay fresh and will not oxidize so easily.

7. If you have apples on the market, peel them first. I chose to keep the peel because I used natural apples, but for commercial ones it is recommended to peel it. Cut the apple in half and remove the spine, then cut in half thin slices.

8. Add the apples to the liquid composition and incorporate them lightly, making sure not to crush them. Then carefully pour the composition into the tray.

9. Place the tray in the preheated oven at 180 degrees for 45 minutes. If after the 45 minutes have elapsed, the cake is still not baked in the middle (it does not pass the toothpick test), it is left for another 15 minutes at 150 degrees.


Whisk the egg whites with a pinch of salt. Add the sugar and continue beating until the foam becomes consistent, glossy and "spikes" when we remove the blades from the mixer.

The yolks mixed well with the oil, lemon peel and vanilla essence are poured over the egg whites and mixed by mixing lightly, at the lowest speed of the mixer. The flour mixed with the baking powder is sifted over the composition, the diced apples and the coconut flakes are added and everything is incorporated with a spatula, with light movements, from the bottom up.

The composition is poured in a uniform layer in the tray (25/35 cm) lined with baking paper. Bake on medium heat (160 degrees electric oven with ventilation) for about 30 minutes, until the cake passes the toothpick test.

Remove the cake on a grill, along with the baking paper. Leave to cool, then portion as desired and powder with vanilla powdered sugar.

Normally, if you want to prepare this apple cake, you only need the 3 basic ingredients: apples (preferably some sweet and sour), bananas (well cooked, to be sweet) and coconut flakes. pay attention to the label! avoid traces of gluten). But to be super tasty, I recommend you prepare it with all the ingredients listed. You will not regret!

To bake it I used a round shape with removable edges with a diameter of 17.5 centimeters. If you want to prepare it in a normal tray, I recommend using baking paper. This will make it easier to remove without breaking.

And now, so that everything is not so rosy, I must mention the fact that in this diet is not recommended a high consumption of sugar, it is even just fruit. The recommended daily level of fructose is 20g. To give you an idea, a banana has on average 7 grams of fructose, an apple 10 grams, a handful of grapes 12 grams or half a mango 16 grams.
