Fish brine with vegetables

The fish, cleaned and washed, season it and put it in the preheated oven for about 30 minutes. (I proceed as follows: grease the oven grill with a little oil, so that the fish does not stick, and place a tray of water under the grill). We make sure it browns well on both sides.

Meanwhile, bring the water to a boil together with the thyme, salt and pepper. When it boils, add the diced vegetables, and when they have boiled enough, add the fish and let it cook for about 10-15 minutes.

Serve with polenta (if you like!) And garlic sauce!

Brine bacon - simple and tasty!

A very successful recipe! The bacon comes out incredibly tasty and soft.

INGREDIENT:

-a teaspoon of black peppercorns

-condiments for bacon - to taste.

For brine: 200 g of salt to 1.5 liters of water.

METHOD OF PREPARATION:

1.Cut the bacon into 4 cm thick pieces (in the transverse direction). Put them in a saucepan or other suitable bowl.

2.Cut the garlic into fairly large pieces.

3. Sprinkle the garlic cloves, black peppercorns and bacon spices over the bacon pieces in the pan.

4.Prepare the brine: add salt to boiled and cooled water. Stir until completely dissolved.

5. Pour the brine over the ingredients in the pan. Cover the bacon pieces with an overturned plate so that they are completely covered in brine.

6. Allow the bacon to salt for 24 hours at room temperature. Then refrigerate for about a week. After that you can serve it.

Method of preparation:
The perch is not cleaned of scales and its belly is not cut.

Clean the intestines by cutting the strip between the base of the caps and the belly, the mats will be removed with the tip of a knife and then washed well with a stream of cold water.
Scales and skin will take off very easily after baking. We tossed the fish with a napkin.
The best perch brine comes out when you cook it over a wood fire.

We use a black plate, we place it directly on the embers and we sprinkle coarse salt. When the plate has heated up and the salt starts to crack, we will fry the perch.

Leave until golden brown, about 5 minutes (depending on the fire) then turn on the other side with a shovel, taking care not to break.
Tomatoes and bell peppers will be slowly simmered next to them.

When they are baked, take them out and put them for 1-2 minutes in a bowl of water, then with the tip of a knife we ​​will remove the black and too burnt spots.

Serve with hot polenta and lots of fun. Good wine or plum brandy cannot be missing from the perch brine.

PS: The perch (Perca fluviatilis) is a predatory fish. Its white meat, without many bones, is particularly tasty, especially cooked brine.


How do we get a tasty, aromatic and perfectly cooked fish?

To flavor this grilled fish I used the grilled spice from the range Delicate 100% natural. It is a mixture of natural spices, without monoglutamate, without chemicals. The spice is perfect for any kind of grilled dishes, even for fish or vegetables. I really like it and I use it every time I cook any grilled meat. It has a wonderful aroma and I even season the vegetables with its help. For the whole trout, I added lemon slices and green parsley inside the fish for extra flavor. The fish is perfectly cooked when it is well browned and has firm and juicy meat. It cooks very quickly, so you only have to leave it on the grill for a few minutes.

I added a vegetable garnish to this grilled fish and chose to use zucchini and eggplant, two of my favorite vegetables. Obviously you can use any kind of vegetables you like. Mushrooms, potatoes, onions, even asparagus. The fish can be served with polenta, garlic or a large salad. You can add your favorite sauces or even make one brine. Put the pot in the preheated oven for 45-50 minutes at 170 degrees. Allow to cool slightly and serve.


Baked fish plate with vegetables & # 8211 Ingredients

1. First, you need to cut the fish into equal pieces, clean it and wash it well.

2. After that, wash the onion, garlic and parsley, then cut them into small pieces. Boil the tomatoes, peel them and cut them into cubes, then mix them with the tomato paste and 100 ml of water.

3. Then sauté the onion and add the tomato mixture. Shortly add paprika, pepper, bay leaves, garlic, a liter of boiled water and salt.


Bacon in brine!

1.Wash and dry the pork breast. Cut it into pieces.

2.Prepare the brine: add salt to boiling water. Stir and boil the brine for 3-4 minutes, until all the salt has dissolved.

3.Cut the garlic into slices.

4.Put the pieces of bacon in a deep saucepan (or in a jar): in 1-2 layers. Sprinkle with ground peppers, garlic slices and bay leaves (if you put them layered, season each layer with these spices).

5. Pour the brine over the bacon so that it covers it completely.

If the bacon is soft, allow the brine to cool slightly (up to 50 ° C) before pouring it over it. If the bacon is harder, pour hot brine over it to soften it.

6. Shake the container a little so that the ingredients spread more evenly. Place an overturned plate over the bacon so that it does not rise to the surface and is completely covered with brine.

7. Cover the container with a lid. Leave it at room temperature overnight to cool. Then put it in the fridge for 3 days.
