I try this jam for the first time and the idea came to me after I tried the nectarines in a cake. They were excellent and so is the jam.

  • 1.5 kg of nectarines washed and peeled
  • 500 gr sugar

RECIPE PREPARATION Nectarine jam with ginger:

The nectarines are passed through the robot.

We also had rhubarb in the garden, my mother sometimes even soured the soup with it. It is a plant with large leaves and from which only the stem is consumed. It is basically cleaned of a thin layer of bark, but if the stem is very young, the bark can also be eaten. Rhubarb contains oxalic acid especially in the leaves. That is why they are not consumed. There is a little oxalic acid in the bark of the stem, the amount increasing as it ages. But then it also becomes fibrous and we will have to clean it anyway. Oxalic acid is also present in sorrel and from it comes the sour taste of these plants.

From these quantities results a jar of 400 ml of rhubarb jam.

& # 8211 6-8 nectarines, 1 egg + 1 egg yolk, 250 g butter, 150 g + 1 tablespoon sugar, 1 sachet vanilla sugar, 400 g flour, 1 sachet baking powder, 60 g oatmeal, 1 teaspoon baking powder ginger, 1 tablespoon lemon juice, 100 g walnuts, salt

Mix the flour with a pinch of salt, baking powder, sugar and vanilla sugar. Add the cold butter cut into pieces, the lemon juice and knead with your hands until smooth. Put aside 1/3 of the dough that you mix with the egg yolk, oatmeal until smooth. Mix the rest of the dough with 1 egg and ginger powder until smooth. Wrap each dough in cling film and refrigerate for 30 minutes.

Coarsely chop the walnuts. Wash the nectarines well, remove the seeds, cut into pieces and mix with 1 tablespoon of sugar. Line a tray (22 & # 21530 cm) with baking paper and roll out the ginger dough. Cover the surface with nectarines and 2/3 nuts.

Cover the surface with the broken dough, the pieces over which we sprinkle the rest of the nuts.

Put in the preheated oven, over medium heat, for about 35 minutes. Cool in the pan. We remove the paper being careful not to break the cake and place it on a plate. We portion and serve. What was not consumed I kept in the fridge for 2 days.

Pineapple jam with ginger

2. Weigh the pineapple, cut it and put it in a food processor, along with lemon juice and ginger, Mix until a creamy paste is formed.

3. Pour the pineapple puree into a pot and bring to a boil, then simmer for 15 minutes on low heat, or until the pineapple has softened.

4. Take the pot off the heat and weigh the sugar making sure it weighs the same as the pineapple weighed earlier. Add the sugar and stir continuously until it dissolves.

5. Put the pot back on the heat and simmer for 5-6 minutes, stirring constantly.

6. When you think the pineapple jam has set, turn off the heat. Put a tablespoon of jam on the plate in the freezer. Leave it for a few minutes to see if it starts to settle. Put your finger on the composition: if a fine pojghita has formed, then it is ready, if not, bring it back to the boil for another 2 minutes. Test the pineapple jam each time and continue cooking, if necessary.

7. Let the pineapple jam with ginger cool for 15 minutes, then pour it into warm, sterilized jars, filling them as much as you can. Seal them well. Allow them to cool completely, then store them in a dark and cool place.

Tips. The jam can be stored for up to 3 months in a cool, dark place. Once the jar is opened, keep the jam in the refrigerator.

I washed the quinces very well to remove the fluff from them.

I then put the jam in clean, dry jars.
