The yeast is crushed and rubbed in a cup with the sugar until it liquefies. Add 2-3 tablespoons of warm milk and 2-3 tablespoons of flour then let it rise. Mix the flour well with the sugar, eggs, essence and grated lemon or orange peel, pour the milk with the yeast. Knead well after I put all the milk. Add the soft butter, knead until the dough no longer sticks to your hands. Then let it rise for 1 hour.
Filling: Crush the cheese, add the sugar and vanilla sugar, the yolks and mix well. Add the semolina and mix again.
Spread the dough, cut the squares and put a spoonful of filling in the middle of each square and join the 4 corners of the square. We put them in the tray lined with baking paper and grease them with egg. Put them in the preheated oven at 180 degrees for 25-30 minutes.
After baking, leave them to cool in the pan, then powder them with sugar.
