Put flour in a bowl and mix it well with baking powder and salt, then rub it with lard or margarine (I used lard because it comes out softer)
add 2 whole eggs a vanilla sugar, 100 gr sugar, lemon peel and milk as it contains to be a more consistent dough so that it can spread well.
Make the dough in the evening and leave it in the fridge until the next day.
In a saucepan or bowl we put the cheese 300 gr sugar, the raisins that have been previously soaked with rum and water essence, vanilla sugar, cinnamon, semolina and four egg yolks
Then mix everything well and add the beaten egg whites at the end.
Mix with a wooden spatula until well incorporated.
In a tray greased and lined with baking paper, spread a sheet and then put the cheese composition.
We grate the remaining dough over the cheese, as if we were putting another sheet.
Put it in the preheated oven and let it bake until the dough on top turns golden.
Then take out the cake, leave it to cool, then powder it with powdered sugar.
