Grilled Corn and Nectarine Salad with Toasted Spice Vinaigrette

The sweetness of nectarines makes for some fascinating bites. (This recipe was developed with IBM's Chef Watson.)

Ingredients

  • 1 tablespoon plus ¼ cup olive oil
  • ½ teaspoon coriander seeds
  • 3 tablespoons fresh lemon juice
  • ½ teaspoon chopped fresh rosemary
  • Several dashes of hot sauce
  • Freshly ground black pepper
  • 2 nectarines or peaches, sliced into ½"-thick wedges
  • 1 small shallot, thinly sliced
  • 1 cup torn fresh basil leaves
  • 4 ounces queso panela or Cotija cheese, crumbled (about ½ cup)

Recipe Preparation

  • Prepare grill for medium-high heat. Brush corn with a total of 1 Tbsp. oil; season with salt and sprinkle with chili powder. Grill, turning occasionally, until tender and lightly charred in spots, 6–8 minutes. Transfer to a cutting board and let cool, then cut kernels from cobs.

  • Meanwhile, toast coriander and cumin seeds in a dry small skillet over medium heat, tossing, until fragrant, about 3 minutes. Let cool, then chop with a knife or coarsely grind in a spice mill. Whisk with lemon juice, rosemary, hot sauce, and remaining ¼ cup oil in a medium bowl; season with salt and pepper. Add corn kernels, nectarines, shallot, basil and cheese and toss to combine.

    Limiting barbecues to a measly three months a year is a real shame. Who doesn’t want corn on the cob, ribs, and s’mores year round? Here’s a way you can have your burger and eat it too: the genius grill pan. Not only does it make cleanup a breeze, but grilling can also be one of the healthiest ways to prepare meals.

    1. Grilled Pork Tenderloin

    Pork is one of the best sources of easy-to-absorb iron. Dust a lean cut of tenderloin with a few simple herbs and spices, then throw it on the grill pan to give your hemoglobin a boost.

Top the flatbread with goat cheese, a more easily digestible alternative to cow’s milk. Its mild taste pairs well with the stronger flavors of caramelized onions, mushrooms, and reduced balsamic.

    Savory, sweet, nutty, herby? This sandwich will keep you guessing with each bite.     Colorful Strawberry Arugula Salad with Balsamic Vinaigrette

    I declare this strawberry number the Official Salad of Summer 2018! It’s fully loaded with colorful strawberries, radishes, red onion, basil, jalapeño, toasty sunflower seeds, and fresh arugula.

    Creamy goat cheese and a simple homemade balsamic vinaigrette round out the sweet-and-slightly-spicy flavor profile. It’s an unexpected combination of flavors, perhaps, but they’re truly irresistible together.

    This is a hearty summertime garden salad that you can serve as a light dinner, or as a side salad for a crowd. I think it would go well with smoky flavors from your grill.

    I should mention that this is a big salad. I could barely manage to toss it all together on my largest serving platter. You could divide all of the ingredients in half—or better yet, store leftover salad and dressing separately and enjoy leftovers for a few days.
