RECIPE PREPARATION Quince jam:
Peel the quinces and cut them into cubes, removing the spine. in a pot we make the syrup. put the sugar and water to a boil, letting it boil for 10 minutes, then add the quinces. Boil until the quince pieces soften and become a golden composition (about 30 minutes) and add the lemon juice and grated peel, leaving it to boil for another 5 minutes. Put them hot in jars and fold them, keeping them warm until the next day. We store them in the pantry or cellar away from light for days in a cool place.
To 2 bowls of diced quinces add a bowl of sugar. Whoever does not have the patience to make the syrup before can put it all on fire.
