Turkey roll with vegetables

Heat the butter in a deep frying pan over high heat.

Hello dear lusts. Today I prepared TURKEY ROLL filled with sausages and vegetables, covered with bacon. It's an extraordinary taste and perfect for the holiday table. It is not so complicated to make and it is eaten quickly. The meat is juicy and all the ingredients fit together perfectly.

Ingredient:

  • Half a 1.5 kg turkey breast.
  • 2 sausages (250 gr.)
  • 1 medium carrot
  • 1 medium onion
  • 1 celery root
  • 2-3 cloves of garlic
  • 3-4 slices of white bread
  • 1 twig - freshly chopped rosemary
  • 200 gr. - thinly sliced ​​bacon
  • 100 ml. - hot water
  • 2 tablespoons mustard
  • 4-5 dates
  • Salt and black pepper
  • 2 tablespoons - sunflower or olive oil

Method of preparation:

  1. Heat a frying pan over high heat, pour a little oil and put the meat inside the sausages, grind it with a wooden spoon and fry it for 5 minutes, stirring occasionally. Then remove the meat from the pan and add the onion, celery stalk and carrot all cut into small cubes. Season with salt, black pepper and fry for 5-6 minutes or until the vegetables are soft and slightly caramelized.
  2. Put the fried vegetables in a bowl, add the meat on top, finely chopped dates, freshly chopped rosemary, diced bread, pour hot water on top and crush the garlic cloves in a special press. Mix everything together and set the filling aside.
  3. Cut the turkey breast in half but not in the end and cut it from place to place so that it is about the same thickness. Cover the piece of meat with cling film and beat it with a schnitzel hammer. At the end it should be about 2 cm. thickness.
  4. First grease the meat with a thin layer of mustard, then arrange the filling closer to the edge in a horizontal row.
  5. Roll the meat carefully so that the filling remains inside. Cover the roll with thin slices of bacon and tie the roll from place to place with string to better maintain its shape.
  6. Place the roll on a baking rack placed on a baking tray lined with aluminum foil.
  7. Bake the roll in the preheated oven at 180 degrees C for about 50-60 minutes.
  8. Remove the roll from the oven, let it sit for about 10-15 minutes then cut all the threads and serve it with pleasure. Good appetite!

You can prepare the turkey roll either for a cold appetizer or for a main course with a side dish. For this turkey roll recipe you can use either the breast or the boned thighs from a larger turkey.
For any of the options you choose, you have to cut the meat into larger slices and beat it with a kitchen hammer. The turkey meat is then greased with three quarters of the beaten egg white. Sprinkle with finely chopped herbs, salt and cheese on a large grater. In order for the roll to keep its shape, it is tied with a string, after which it is greased with the rest of the egg white.

Turkey roll is one of my favorites. I like turkey more than chicken, it tastes better and is not as fat as other types of meat. I use it in many dishes and it seemed appropriate to use it for holiday steak. I chose the turkey roll, because I wanted to offer an alternative to the classic pork frying pan that we all prepare, but of course you can also use pork muscles instead of the turkey breast.

To prepare this turkey roll, I thought about what ingredients would suit this kind of meat to make it delicious and juicy. Because I used to Turkey breast without bone and skin, so without traces of fat, I chose the variant of aromatic butter meant to taste and keep the meat juicy. In butter I added common but extremely fragrant ingredients, such as garlic, rosemary, parsley, mustard and red peppercorns.

Also for flavor, but also for taste, I put a few slices of turkey bacon, 5 in number, and some grated Parmesan cheese. That's because we are preparing this roll for a holiday and we want it to be more special. However, Parmesan cheese can be omitted, or it can be replaced with mozzarella. To tie the roll, I used kitchen thread, because I wanted to make sure that the filling would not come out of the roll. If necessary, you can use toothpicks or skewer sticks.

I put the roll in the oven, greased with oil and left it for about an hour and 20 minutes, until it browned well on top. You can also check it with a steak thermometer, and the internal temperature must be at least 78 degrees Celsius. When the turkey roll is ready, do not serve it immediately. Cover it with aluminum foil and let it rest for about 30 minutes, it will be much juicier and cut easily. Serve it with your favorite garnish and enjoy the result.

For starters, we prepare the flavored butter. Put the butter (which is at room temperature) in a bowl, add the mustard and mix everything well until you get a creamy composition. Then add the finely chopped onion and parsley. Season with salt and pepper and mix everything well.

We wash and clean the mushrooms. We cut them into small pieces and put them aside.

Wash the turkey breast, dab it with a dry napkin and then cut it into strips.

We spread a plastic sheet on the worktop. We put the strips of pork ham on it (one up and one down, horizontally). Place the turkey breast strips over the slices of ham. Grease the turkey breast strips prepared with the aromatic butter prepared earlier. Add the Parmesan cheese and the mushrooms cut into small pieces. Finally, add the dried apricots and roll with foil. Refrigerate for 5 minutes.

Wallpaper a tray with baking paper, place the roll in the tray (remove the plastic wrap) and put it in the oven at 180 & degC for 40 minutes.

Serve with a mixture of vegetables. You can also sprinkle a little Parmesan over the vegetable mixture.
