  • 500 grams of fresh yolks
  • 2 leeks

  • 2 good hands of arugula leaves or other salad leaves

Before moving on to the cooking steps, I want to specify that this salad recipe will be very quick to make, you just have to have everything ready: the hot grill, a large pan, well heated, in which to sauté the mushrooms, onions and peppers , washed and cleaned vegetables, yolks well cleaned of any traces of leaves or soil and broken into longitudinal strips, julienned onions, peppers into large cubes.

Regarding the salad leaves, I want to tell you that the arugula fit perfectly, according to my taste, bringing a pleasant contrast with its peppery taste, but you can use any other leaves you like, only if they are bigger, after washing and the swabs will have to be broken into pieces of the right size to be taken with the fork.

1. The yolks cleaned and broken into pieces of the right size are sautéed in a well-heated pan in which 1 tablespoon of oil has been added.

2. After the yolks have browned and softened enough to be pleasant as a texture, salt and pepper and set aside in a bowl. Sauteing the yolks will take 3-4 minutes, no more, in no case should they be overcooked.

3. In the same pan add 1 tablespoon of oil, heat well and add the chopped onion julienne and bell peppers cut into large cubes. Saute everything vigorously for 3-4 minutes, until the vegetables begin to shine and caramelize in places, then remove over the yolks in the same bowl.

4. Meanwhile, place the leeks on a well-heated grill, next to the corn cobs previously greased with a thin film of oil. Bake on the grill, turning them on all sides, until the corn has a soft grain and the leek is completely charred on the surface. This charred layer will be removed, revealing the sweet and juicy core of the ripe leek, which is cut into rounds (only the white and light green part, otherwise the ends of the leaves will burn) and add to the bowl over the mushrooms, onions and pepper.

5. Cut the ripe corn kernels from the cobs with a knife and add over the rest of the ingredients in the same bowl.

6. Crush the garlic clove in a mortar, together with 1 pinch of salt. Add the mustard and honey and mix well. Pour the olive oil into a thin thread, stirring constantly. Finally, add the red wine vinegar (be sure to use a noble vinegar, with a pleasant taste) and match the taste of the dressing with salt and pepper. Add the arugula leaves over the rest of the ingredients and pour the dressing. Homogenize and immediately slice on plates, adding, to taste, goat cheese. Serve the salad immediately, otherwise it is avoided to stay with the dressing for a long time because the arugula leaves will wither immediately, do not add the dressing until before serving.


Baked corn with cheese and garlic butter

Peel a squash, grate it and squeeze the juice. Remove the corn silk, then cover the corn with the leaves again and leave them in a bowl of cold water for half an hour.

You can prepare the butter cream with garlic in advance and keep it in the fridge. Add more or less garlic as you want the taste to be strong. Mix in a mixer the butter (semi-soft) with the garlic, hot pepper and 2 tablespoons of chopped chives, salt and pepper to taste.

Remove the cobs from the water and shake off excess water. Then put them on the grill, turning them from time to time (the leaves will protect the corn from burning) to bake evenly.

When the corn is cooked, remove the leaves, grease well with the butter mixture, sprinkle with grated cheese and squeeze some lemon on top. Sprinkle a little finely chopped chives at the end.
