The yeast mixed with the sugar dissolves in warm water. Then pour over the flour mixed with salt and knead an elastic dough, slightly sticky. Leave to rise until it doubles in volume.
Spread the dough in a tray well greased with oil and lined with flour. let it rise again.
The zest is mixed with the oil, then dissolved with the tomato juice.
I used commercial tomato juice, but you can also use tomatoes, which you scald, peel, then blend. ;)
Pour the sauce over the counter and spread it all over the surface. Put the chopped slices on top, the diced chicken breast and cover with grated cheese on a large-mesh grater.
Put the pan in the oven over medium heat until golden brown.
