Dessert mini balls with cheese and cranberries

Sift the flour into a bowl. Make a hole in the middle and put the dry yeast. Sprinkle a little sugar then pour about 100 ml of warm milk into that pit. Allow the yeast to swell slightly.

Put the sugar in the rest of the warm milk and mix until it dissolves. After the yeast has risen, add the egg, oil and lemon peel. Pour a little milk and mix. Pour over the floured work table and knead until you get a soft but non-sticky dough. Leave to rise for at least half an hour.

Meanwhile, mix the cheese, sour cream, sugar, essence and cranberries. Mix everything well.

Spread the dough into a suitable thin sheet then cut into squares. Put a teaspoon of the cheese composition on each square and then fold it like an envelope, sticking them together at opposite ends. Place in a tray lined with baking paper and let rise for about 15 minutes.

Grease with beaten egg and put in the preheated oven at 180 degrees for about 30 minutes, until nicely browned on top.
