- 200 gr smoked bacon
- 2 carrots
- 1 patrol
- 1 celery
- 2 capsicums
- 1 onion
- 4 cherry tomatoes
- 2 eggs
- 150 gr sour cream
- tarragon juice and dry
Preparation time: less than 60 minutes
RECIPE PREPARATION Vegetable soup with smoked bacon and tarragon:
We clean the vegetables, wash them and cut them into cubes. Cut the bacon into slices. In a pan add 2-3 lbs of oil and heat the smoked bacon, add the chopped vegetables over the bacon and cook for 5 minutes.
Put 3 liters of water in a pot and add a teaspoon of salt and boil it. When the water starts to boil, add the bacon and the hardened vegetables and let it boil for 30 minutes. When the vegetables are cooked, reduce the heat. Mix the sour cream with the 2 eggs that I previously beat with salt and pepper. Add 2 tablespoons of juice and mix lightly. Pour the composition into the soup pot and let it boil for another 2-3 minutes.
Remove the pot from the heat and add the juice from the tarragon and dry tarragon or from the jar, preferably.
