Cut 2 slices of bread with a thickness of 2.5 cm. With a bread knife, make an incision on the side of each slice of flour, like a pocket, which is filled with as many berries as possible, taking care that the slices of bread remain whole.
Using a food processor, mix the banana with the egg, cinnamon and nutmeg. Pour into a shallow dish.
Soak each pocket in the previously obtained mix.
Heat a non-stick pan over medium heat, divide the remaining banana mixture into 2 and pour over half a pan. Place the pockets on top so that a small pancake is formed under each piece of bread. Cook for a few minutes on each side, until golden.
Serve with yogurt, cinnamon, honey, cocoa nibs and nuts / pistachios
