The food itself was very good, quite spicy to me from the audience, so pay close attention to the amount of chili used (whether we are talking about whole chili, flakes or powder).

Fried shrimp

Buy raw shrimp, which smell big or not at all and not fish, without orange colors between the head and body, which denotes a relative freshness.

With a sharp knife, cut the shrimp lengthwise, on the back, and remove the digestive tract. That brown / black vein.

Wash lightly in cold water (not under running water because you break them), dry well with paper towels and season well with olive oil, sea salt, pepper and chili flakes.

Add water and let the rice boil in the pan, and as it decreases, it is important to top it up with water until it boils. When the rice is cooked and the water has dropped almost completely, you can add shrimp. Leave the composition on the fire for another 3 minutes and mix gently to make sure you don't break the shrimp. Take the pan off the stove, add the butter and Parmesan cheese and enjoy a delicious dish.
