  • 1 small onion, chopped
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 8 large eggs
  • 10 slices ham
  • 150g grated Cheddar cheese

  1. Preheat the oven to about 150 C / Gas
  2. Chop potatoes into small cubes and fry in a little oil over a low setting until nearly tender, about 15 minutes. Add the onion and cook and stir until soft.
  3. Once potatoes and onion are tender remove from the pan and place in a bowl, add salt, baking powder and eggs and mix well.
  4. Line a dish with greaseproof paper and add half of the potato mixture.
  5. Add a layer of ham over the potato mixture.
  6. Spread the grated cheese over the ham.
  7. Add another layer of ham over the cheese and then add the remaining half of the potato mixture and prick with a skewer in different places.
  8. Place in oven until set normally takes about 30 to 45 minutes. Remove from the oven, slice as you wish and serve!

Tip

I've also filled this with Spanish ham and green peppers, guests loved it. So feel free to experiment with fillings but please let me know! :)

What are the different versions of tortilla española?

What is the origin of the Spanish omelette?

Before the seventeenth century, tortillas were filled with any leftover you could find and as strange as it may sound, the garnished omelette was considered a poor man’s dish whereas the plain omelette was a dish for the rich.

It was only after several products were brought back by the great explorers, including potatoes, that tortilla became a dish “for all”.

The legend says that it is Basque General Tomás de Zumalacárregui who invented Spanish tortilla during the siege of Bilbao. This simple dish, quick and nutritious was used to feed the struggling Carlist armies.

Another version says that it’s a stay-at-home mom of Navarre who invented tortilla española. She had prepared scrambled eggs mixed with potatoes and onions. She then received a visit from General Zumalacárregui who spent the night with her. The general liked the potato tortilla so much that he quickly popularized it.

In both versions of the story, the common thread is that the Spanish tortilla spread over during the Carlist wars in Spain.

We were guests at a friend’s house and my Spanish omelette was served as the appetizer. It was a resounding success. I did not forget to mention that this recipe was a kitchen nightmare for me… Well that was a long time ago when I started cooking!

In those days, my Spanish tortilla often ended up as scrambled eggs with potatoes. Not to mention the catastrophic battlefield that my kitchen looked like after each try!

Indeed, the process of flipping a Spanish tortilla for the first time, and for someone as perfectionist as me, may be a source of trauma. Be sure to follow the advice in my Spanish omelette recipe!


Spanish omelettes are loved throughout Spain and you will find them in every tapas bar but they are also enjoyed in Mexico.

We have taken the classic recipe and have given it a Mexican touch with the addition of sautéed tomato, goat cheese, and a pinch of Mexican oregano. It looks laborious but is quite easy to make.

It can be eaten warm as a main dish with a simple green salad or cold as an appetizer.

Ingredients:

Start by gathering the following ingredients:

  • Waxy white potatoes (small)
  • Eggs
  • White onion
  • Tomatoes
  • Goat cheese (or any cheese of your choice)
  • Mexican oregano
  • Salt
  • Olive oil

Rinse the potatoes then peel. Discard the peels.

Slice the potatoes into &frac18″ pieces.

Slice the onions into &frac18″ strips.

Cut the tomato into ¼″ thick slices.

Preheat a medium frying pan (10″) with ¼ cup extra virgin olive oil to medium-low.

Add the potatoes and stir to cover in olive oil.

Cook for 10 minutes stirring regularly so that the potatoes cook evenly.

Then add the sliced onions to the potatoes.

Cook for 5 more minutes stirring continually so that the potatoes and onion cook evenly and don’t burn.

Add the oregano and cook for 5 more minutes stirring continually. Don’t allow the mixture to brown.

Remove the potato-onion mixture from the heat and strain. Allow to cool for 10 minutes. Reserve the olive oil. You will use it to cook the omelette.

While the potato-onion mixture is cooling. Cook the sliced tomato in the same pan over medium heat.

Cook the tomato until it is just starting to brown.

Crack the eggs into a medium-size mixing bowl and beat with a wire whisk or fork until well mixed.

Add the potato-onion mixture to the beaten eggs and stir to coat the potatoes with egg.

Heat your frying pan to medium-low and add the reserved olive oil.

Spoon ½ of the potato egg mixture into your frying pan.

Add the cooked tomato slices distributing them evenly.

Add the crumbled goat cheese.

Spoon the other half of the potato egg mixture into your frying pan.

Using a spatula and working all the way around the omelette, gently push the edge in allowing the uncooked egg to flow around the edge.

Cook for about 5 minutes until the egg has just set.

Now comes the exciting part, flipping the omelette so that it cooks evenly. Place a plate over the top of your frying pan.

Holding your hand on the plate, quickly turn the frying pan over so the omelette releases onto the plate.

Continue cooking for 5 more minutes.

Remove the omelette from the pan using the same technique you used to turn it by placing a plate of the pan and quickly turning it over to release the omelette.

Serving

You can serve your Spanish Omelette hot, at room temperature, or cold. At all 3 temperatures, it’s delicious.

How to make Spanish Omelette

Step 1

Peel and slice potatoes into thin strips.Meanwhile,heat the oil on a low flame in a large saute pan. You can replace oil with butter if you want.

Step 2

Add the potatoes to the saute pan,and fry until they are soft but not brown.It is a good idea to keep the pan covered - that way the steam from the potatoes at the bottom of the pan helps cook the ones at the top and the potatoes will not burn.

Step 3

Cut the onion into thin slices.Fry them lightly in frying pan till they are soft and translucent.

Step 4

Beat the eggs in a large bowl and add salt to it.Add the hot cooked potatoes and onion to the egg in the bowl, gently mix the potatoes and onion into the egg and leave it for five minutes.This starts the egg cooking and helps cover the potato slices in egg so they all stick together nicely.

Step 5

Pour the potatoes, onion and egg mix back into the pan, and cook for about 5 minutes on a low flame.Use a non-stick pan so that the mixture doesn't stick to the pan.

Step 6

When the edge of the omelette looks cooked place a large,flat plate over the pan (like a lid), put one hand on the plate to hold it in place and turn the whole thing over (the first few times you do this it is best do this over the sink - can be very messy).

Keto Spanish Omelette | Low Carb | LCHF

If you’re unfamiliar with a Spanish Omelette, it’s a classic dish that seems very simple given the small amount of ingredients, but can be tricky sometimes to cook. My mum used to make a version of this very often when I was a kid, since eggs are so cheap and it makes for a really quick meal on a late night, when you’re tired from work and have kids to feed and put to bed.

The classic recipe uses onion and potato for the Spanish Omelette filling. Both of these contain natural sugars, which when caramelised and golden, adds a sweet flavour to the Spanish Omelette. Potatoes are definitely one food I really miss sometimes on keto. I grew up in a family where potatoes were a definite go to as a side for lots of dishes. I’ve experimented with lots of different potato subs in different kinds of cooking too and while all different they work well.

I decided the best one for this would be radish as it tastes fantastic fried and has the look of a potato which adds to the aesthetics for this recipe. I actually liked the look of the Keto Spanish Omelette better with the radish, as I left the peel on and you had this nice purple coming through the omelette. With a traditional Spanish Omelette the potato is always peeled. The radish doesn’t come through as sweet like potato does either, but the onion is plenty sweet enough.

Now you might be wondering, does it actually taste like REAL potatoes? I’m not going to lie, no it doesn’t taste exactly like real potato, but it serves very well as a stand in and definitely has the look of real potato. If you haven’t had radishes cooked, you’re also in for a surprise! They lose all the sharp bite they have raw and take on a completely different flavour. I’ve given raw fried radishes to non-keto family members without telling them what it is. After lots of thought, they all guessed potato and couldn’t believe that it was radish. For me, I think the biggest difference between radish and real potato is that radish have quite a lot more water so they’re not as firm as potato is.

This Keto Spanish Omelette is great served hot or cold, as a complete meal or with a side, or to serve as a side with something else. I ate some of this with some pork I did on the smoker and it was a great accompaniment. It’s also suitable for breakfast, lunch and dinner. It has a lovely creamy kind of centre, which is done by doing the egg slightly under. I always think this is the best way to do egg, but I know a lot of people who don’t like it. So you can definitely make this Spanish Omelette ‘well done’ but be aware the texture will be different and it will be drier.

This Keto Spanish Omelette also uses extra virgin olive oil to fry the radish and onion in. This is a crucial step to use olive oil, because it really adds a beautiful olive oil taste that is an important part of a Spanish Omelette. It also coats the egg and onion so that even after the Spanish Omelette is cooked and set, the egg doesn’t really properly stick to the vegetables, so that it kind of comes apart slightly when you eat it. It’s just one more texture to the omelette.

I do know though that some people don’t like using olive oil for frying, so while I do highly recommend the flavour of olive oil, you could sub with a neutral taste coconut oil or ghee instead if you feel you need to. A good idea would be to also drizzle the Keto Spanish Omelette with some olive oil before serving so that you’re still getting some of that flavour.

The number one step of this recipe is flipping the Spanish Omelette. A non-stick pan really is a must for this as it makes the flipping so much easier. Always use a plate/platter that covers your whole frying pan and is preferably wider, so you don’t have your omelette breaking and spilling over the edges. You also need to make sure the Keto Spanish Omelette is set properly on the bottom before you flip it, or it won’t hold its shape or can even break apart. If you’re not sure, always overcook the bottom rather than undercooking as you can fix this later when you cook the other side. The bottom also won’t be the presentation side so if it gets a bit too dark, no-one will notice!
