What Is a Passover Seder?

As the Jewish holiday of Passover approaches, matzah and Manischewitz are on the shelves at grocery stores, jelly candies are in the seasonal aisle, and kosher seltzer bottles with yellow Hebrew-inscribed caps crowd the shelves. For millions of Jews around the world, it's time to say goodbye to fluffy white bread and other leavened treats, and hello to dry crunchy matzah, for eight days beginning the evening of April 14.

The weeklong holiday begins with a Seder, a fifteen-part ritual meal, on the first night of Passover. In Hebrew, "Seder" means "order," referring to the parts of the ritual leading up to the Passover dinner. A Seder is not your typical family sit-down dinner — food is an important symbolic element used to tell the story of the Exodus from Egypt through the Haggadah, “the telling.”

The meal revolves around the telling of the familiar story of the Exodus: According to the Hebrew Bible, after living peacefully in Egypt, Israelites began to be feared, resulting in their persecution, enslavement, and the drowning of their firstborn sons. After fleeing into the Sinai desert, Moses, an infant rescued by the pharaoh’s daughter and adopted into the royal family, returned to Egypt to free his kin by God’s command. Pharaoh rejected Moses’ pleas to free the Israelites, so God unleashed 10 plagues on the Egyptians, including the slaying of their firstborn sons. The Israelites were told to mark their doorframes with lamb’s blood, and the plague would “pass over” their homes. Finally, Moses led the Israelites out of Egypt, but Pharaoh sent soldiers after them. God parted the Red Sea, allowing the Israelites to cross before closing the waters and drowning the soldiers — a miracle, bringing them closer to their ancestral home in Canaan, the Land of Israel.

One of the most widely known practices of Passover is the removal and abstaining of all leavened foods. As the story goes, in their rush to escape Egypt, the Israelites were unable to allow their bread to rise, resulting in unleavened flat breads similar to matzah.

Each table has a Seder plate, containing items symbolic of the Jews' enslavement and exodus:

Bitter herbs (maror): Symbolizes the bitterness and harshness of slavery. Usually it's parsley, celery leaves, romaine lettuce, or horseradish.
Charoset: A tasty mixture of chopped nuts (usually walnuts), grated apples, cinnamon, and Manischewitz, meant to symbolize mortar used to build the storehouses and pyramids of Egypt.
Karpas: Usually celery or parsley (if not used as the bitter herb), to be dipped into salt water (which symbolizes tears) at the beginning of the meal.
Z'roa: Traditionally a roasted lamb shankbone, meant to symbolize the Paschal lamb sacrificed at the Temple in Jerusalem. Can also be substituted by a chicken wing or chicken neck.
Egg (Beitzah): A roasted hard-boiled egg, symbolizing mourning over the destruction of the Temple.

Saltwater (for dipping the karpas into) and matzah (for eating the charoset with) are also traditionally placed on the table next to the seder plate.

Though many of the items on the seder plate serve as reminders of struggle, Passover is about celebration as well. What is a celebration without good food? The Seder dinner, amid the rituals and storytelling, includes delicious Jewish staples — fatty brisket, comforting matzah ball soup, potato kugel and more.

Though the pandemic sadly restricted Passover celebrations last year, and is set to do so again this year, the central story of Passover resonates strongly in our current moment. The Haggadah is full of both joy and struggle, and on the Seder plate the bitter herbs and salted water lie side-by-side with the sweet haroset. You may not be going all-out with your Seder night this year, but however you're celebrating, whether it’s virtually or with members of your household, food can still play its vital role in perpetuating and strengthening sacred traditions. Here, we’ve gathered a selection of our favourite Passover recipes, including a family recipe for matzo brei from Jessie and Lennie Ware and a fruity, Venetian-style haroset from Nigella Lawson.

Like so many dishes with ancient histories, there are a multitude of recipes for haroset. This particular version, inspired by a traditional Venetian recipe, is rich and sumptuous, with chestnuts, pine nuts, a host of dried fruits, and plenty of warm spices - "a sort of multi-fruited and chestnutty confit", according to Nigella.

Chicken soup is a quintessential Jewish dish that is by no means exclusive to Passover, but it forms an integral part of the Seder in many households. Lennie Ware's tried and tested method produces a broth with serious depth of flavour, and her matzo ball recipe will ensure that you achieve the tender, fluffy consistency you're after.

Matzo brei is not a component of the Seder dinner itself, but is traditionally eaten by Jews throughout Passover when leavened foods are off limits. Lennie Ware compares the dish to eggy bread, and recommends eating it with smoked salmon, or sprinkled with sugar and a little cinnamon.

This simple cake from Nigella Lawson's Feast is full of intense flavour, thanks to the combination of whole boiled oranges and rich cocoa. To render it suitable for Passover, Nigella recommends making it without the leavening powders it will not rise in the same way, but you'll lose none of the chocolatey, citrusy taste.

This year, my Passover seder is going to be much smaller than usual. Well, there might be as many attendants&mdashbut all but two of them (my partner and I) won&rsquot be in my home with me. Everyone else will be on the computer, in their own homes.

I&rsquove already decided on a few adjustments I&rsquoll be making to adapt to the situation, including:

  • Having a communal, virtual seder plate with my family. Since we&rsquore all trying to be conscious of our consumption right now, especially when it comes to perishables, we&rsquore going to divvy up the components and everyone will have an item with them when they Zoom in to our virtual seder. I called dibs on horseradish, since I managed to grab some from the take-home fridge at America&rsquos Test Kitchen&rsquos office before we all started working from home.
  • Opening up the afikomen search. I&rsquom a competitive person, and with a two-person household, I need to recruit some competition in this search for the sought-after piece of matzo. Fortunately, I live in a house with two other units and I have four neighbors&mdashwho have all been strictly self-quarantining. I plan to ask my partner to hide the afikomen in a shared space and the rest of us will search for it. If anyone&rsquos uncomfortable being in close quarters, we&rsquoll go in shifts and time how long it takes each person to find it. (Did I mention I&rsquom competitive?)
  • Loosening up the rules. Since I&rsquom trying to minimize my trips to the grocery store, and I don&rsquot know what I&rsquoll find when I go, I&rsquom going to mine my pantry before I go shopping. So yes, that might mean using an ingredient that isn&rsquot kosher for Passover. It&rsquos not traditional, but nothing about this situation is. And we&rsquore all just doing the best we can.

No matter how you usually observe Passover, one thing that has resulted from quarantining is that many people have no choice but to become first-time hosts, even if it's just for one or two people. As the resident cook in my family, I&rsquom going to help my relatives plan seder foods that match their abilities and preferences. That means finding an easy, mostly meat-free menu for my vegetarian sister and her carnivore husband, a make-ahead option that my parents can prepare and eat for a couple days afterwards, and scaled-down versions of traditional dishes for other family members who are cooking for one.

If you&rsquore in the position of being a first-time host, here are some simple recipes that will help you make it a holiday to remember.


What is on the Passover Seder Plate?

The seder plate is the focal point of the Passover seder. Discover its ingredients and symbolism.

Karpas is a vegetable (other than bitter herbs) such as celery, parsley, or boiled potato. It must be a vegetable on which we make the blessing, Borei Pri Ha'Adamah. Passover is the Spring festival where we celebrate the birth of our nation ― and these vegetables are a symbol of rebirth and rejuvenation.

These are the bitter herbs which symbolize the lot of the Hebrew slaves whose lives were embittered by the hard labor. Many people use horseradish for Marror and Romaine lettuce for Chazeret.

Charoset reminds us of the hard Jewish labor performed with bricks and mortar. Charoset is a pasty mixture of nuts, dates, apples, wine and cinnamon. The Talmud says this serves as an "antiseptic" to dilute the harsh effects of the Marror. Here are some great Charoses Recipes for Passover.

During the times of the Temple in Jerusalem, the Korbon Pesach (Pascal Lamb) was brought to the Temple on the eve of Passover. It was roasted, and was the last thing eaten at the Seder meal. To commemorate this offering, we place a roasted chicken bone with a little meat remaining.

In Temple times, every Jew was "registered" to eat the Korbon Pesach with his particular group. The Talmud says that the bigger the group, the better. This is a source for having large Seder gatherings!

A second offering, called the Chagigah, was brought to the Temple and eaten as the main course of the Seder meal. Today, instead of a second piece of meat, we use a roasted egg ― which is traditionally a symbol of mourning ― to remind us of the destruction of the Temple. The Talmud points out that every year, the first day of Passover falls out on the same day of the week as Tisha B'Av, the day of mourning for the destruction of the Temple.

The Hebrew word seder means order, or arrangement. The Passover Seder is comprised of 15 sequential steps, and thus it is quite fitting that the word seder is used to portray the gist of the evening's proceedings.

When it comes to Yom Tov meals, I focus on choosing recipes that are low maintenance. Recipes that freeze well and reheat well. ਍ishes that won&apost dry out or become inedible if not served right away.  On Passover, when you never know how long the seder will go, the last thing you want think about is stressing about the food overcooking. 

My answer to make ahead chicken recipes that won&apost dry out is Braising. 

Braising is always the way to go for a stress-free experience. Cooking meat or chicken low and slow will result in tender, juicy, fall off the bone meat. ਋raised meat or chicken even taste best after a day or two in the fridge or even a month in the freezer. The chicken really soaks up the flavor after being cooled and you are able to remove the fat from the surface, providing a smoother, richer sauce. 

In the Purim issue of Joy of Kosher magazine, Chef Laura Frankel shared an incredible apple braised chicken dish that I earmarked for the Seder, and I am adapting my recipe for braised brisket and making it with chicken instead it is so easy and soooo good. I am also relying on my family&aposs classic caramelized onion chicken, always a crowd pleaser.

The only drawback of braised food, is the presentation.  To brighten things up and add a finishing touch I rely on a few tricks that are added right before serving.  Here are my 4 secret tricks to dressing up your braised meats for your seder.
