  • 1/4 teaspoon ground cloves
  • 225g dark brown soft sugar
  • 115g blanched almonds, chopped
  • 115g cold butter, cut into cubes
  • 2 eggs, beaten
  • 4 tablespoons port wine

  1. Preheat oven to 180 C / Gas 4.
  2. Mix flour, bicarbonate of soda, cream of tartar, cinnamon, ginger, nutmeg, cloves, dark brown soft sugar and almonds in a large bowl.
  3. Add the butter, eggs and wine. Work everything into a smooth mixture.
  4. Line a baking tray with baking parchment. Use a teaspoon or a piping bag to make 3cm blobs on the baking tray.
  5. Bake for 11-13 minutes or until the biscuits are golden brown. Cool on wire rack. Store in tins.

Spiced biscuits

A friend, Sue Plant, made something similar for Christmas and, since I think they’re great in winter, I asked her for the recipe. She adapted hers from a recipe she found on the web, and I’ve adapted it again. They’re almost like pfeffernüsse (German spicy nut biscuits).

  • 270 g plain flour
  • 50 g almond meal
  • ½ tsp baking powder
  • 1½ tsp ground black pepper
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • icing sugar, to dust

Cook's notes

Oven temperatures are for conventional if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml 1 tablespoon equals 20 ml 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Instructions

Cooling time allow to cool completely

Using an electric mixer, cream the butter and sugar until pale and fluffy, then beat in the egg and vanilla. Stir in the flour, almond meal, baking powder, all the spices and ¼ tsp salt, then continue stirring until the dough just comes together.

Preheat oven to 180°C. Roll 3 tsp dough into 32 balls, about the diameter of a 20 cent piece, and place, about 4 cm apart, on oven trays lined with baking paper. Bake in the centre of the oven, swapping trays halfway, for 15 minutes or until lightly browned.

Transfer biscuits to a wire rack to cool slightly, then roll in icing sugar. Store in an airtight container for up to 4 days.


These sumptuous Christmas Biscuits have all the flavours we look for in a biscuit at this time of the year. The cinnamon, ginger and nutmeg combine perfectly with the final touch of chocolate and coconut for a very tasty gluten-free vegan treat!

  • ½ tsp sea salt
  • 4 tsp cinnamon powder
  • 2 tsp ginger powder
  • 1 tsp nutmeg
  • 2 tbsp tahini
  • 4 tbsp maple syrup
  • 300 g rice flour
  • 100 g almond flour
  1. Preheat your oven to 180°C and line 2 flat baking trays with parchment paper.
  2. In your freestanding mixer or with electric beaters, cream together the coconut oil, cane sugar, salt, cinnamon, ginger and nutmeg until creamy and well combined. Add the tahini and maple syrup, keep mixing.
  3. Next, add the rice flour and almond flour little by little until it forms a dough and divide in 2.
  4. Spread the dough out onto a slightly floured work surface, 0.5 cm thick is ideal. Divide the dough into 2.
  5. Cut out different triangle or star shape sizes if you wish to make the Christmas Tree Biscuit. Otherwise, cut out any shapes and sizes you like.
  6. Carefully place the biscuits onto the tray and bake for 20 to 25 minutes.
  7. Let the biscuits cool a little and transfer on a wire rack for 5 minutes. They will keep in your biscuit box away from the light for 1 week.

Spiced Star Cookies (Speculaas)

Speculaas are traditionally thin, crisp, dark-brown windmill-shaped cookies that originated in the Netherlands. We believe, and our Cookie Companion is testament, that you don't need a mold to be able to enjoy these snapping crisp, delightfully spicy cookies. Try rolling out the dough and using your favorite cutters to make cookies that are just as elegant and fun.

Ingredients

  • 8 tablespoons (113g) unsalted butter, room temperature
  • 3/4 cup (159g) brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cardamom*
  • 1/2 teaspoon cloves*
  • 1/2 teaspoon mace* (or substitute 1/2 teaspoon nutmeg)
  • 1 1/2 teaspoons cinnamon*
  • 1/2 teaspoon salt
  • 1 1/2 cups (177g) King Arthur Unbleached All-Purpose Flour
  • 1/2 cup (48g) almond flour, toasted almond flour preferred
  • 1 teaspoon baking powder
  • 2 to 4 tablespoons (28g to 57g) milk (regular or low-fat, not nonfat)

*Or substitute 1 tablespoon Speculaas spice for the cardamom, cloves, mace, and cinnamon

Instructions

To make the cookies: In a large mixing bowl, beat together the butter, sugar, vanilla, spices, and salt.

Stir in the flour, almond flour, and baking powder, then enough of the milk to make a stiff dough.

Form the dough into two disks, wrap in plastic, and refrigerate for 2 hours or more.

Preheat the oven to 325°F. Lightly grease, or line with parchment, two baking sheets.

Working with one disk at a time, roll the dough 1/8" to 1/4" thick. Cut out shapes using your desired cutters, and transfer the cookies to the prepared pans.

Bake the cookies for 15 to 20 minutes, until they're lightly browned around the edges. Remove them from the oven and transfer them to a rack to cool. As they cool, they'll become quite hard.

To make the icing: Stir together the sugar and enough milk or water to create a thick but "drizzle-able" icing.


What is a Hermit Cookie?

Hermit cookies. They were my Grandma’s most favourite cookies – a New England classic that travelled up the the coast to infiltrate its Canadian neighbours.

The speculation surrounding the name “Hermit Cookies” is that you can tuck them away and they last a really long time. They also freeze beautifully, as uncooked dough balls that you can bake from frozen, or already baked.

While the Canadian version features dates, its American counterpart is just raisins and nuts.

Add the dates, Americans! They’re so luscious and chewy and sticky-sweet a perfect addition to these lightly spiced gems.

The cookies are sweetened with just brown sugar – imparting an irresistible caramel-ly flavour and chewy texture that will have you reaching for a third, then maybe a fourth… which is not as terrible as you might think, because they’re actually lighter than most cookies.

“Lighter” with air bunnies around it, that is – they’re still cookies, they won’t do sit-ups for you – but they do have 1/2 the amount of butter that many other types do…

They’re jam packed with raisins, dates and walnuts, and scented with warm spices – but these are no spice cookie the flavours are subtle.

Because they haven’t got a lot of butter, it’s really important to prep your baking sheets or they will stick – parchment paper is ideal: easiest removal, practically no cleanup, no need for extra fat. If you like to bake, I really recommend you keep parchment paper on hand. Otherwise, just grease ’em well!

The recipe is adapted from my grandma’s Purity cookbook – it’s a treasure, filled with old fashioned Canadian classics.


Recipe Summary

Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.

Combine almond flour, dates, cherries, walnuts, chia seeds, baking soda, and sea salt in a large bowl whisk to blend. Add coconut oil, egg, maple syrup, and vanilla extract blend well with a spoon or fork until dough comes together.

Scoop dough onto prepared baking sheets with a small cookie scoop.

Bake in the preheated oven until edges are golden, about 15 minutes. Turn off oven and let cookies sit with oven door closed, about 10 minutes more. Remove from oven and let cool.


  • 4 cups/600 g amandelspijs (almond paste)
  • 3 2/3 cups/400 g self-rising flour
  • 1 cup donkerbruine basterdsuiker (or 200 g cane sugar)
  • 7/8 cup/200 g butter
  • 4-6 tablespoons milk
  • 7 teaspoons speculaaskruiden (or pumpkin pie spice)
  • 1 teaspoon baking soda
  • Zest of 1 orange (finely grated)
  • 1 egg white (beaten)
  • Garnish: flaked or slivered almonds

Make the almond paste and set aside. In a separate bowl, mix together the rest of the ingredients and knead (you may use a mixer with a dough hook attachment for this). You should be able to shape the dough into a ball without it sticking to your hands. Cover the dough ball with plastic wrap and set aside for an hour. This allows the spices to work their magic.

Preheat the oven to 347 Fahrenheit (175 Celsius). Line two cookie sheets with parchment paper. Halve the dough and press into an even, flat layer on the parchment paper of both cookie sheets. Spread an even layer of the almond paste on top of one of the layers. Now gently invert the other layer on top of the almond paste and peel away the parchment paper.

Brush with egg white and sprinkle almonds on top. Bake for about 30-35 minutes, or until you can see that the almonds are caramelizing and the cookies are turning a slightly darker shade of brown. Allow to cool on a cooling rack for about 10 minutes and then slice into rectangles with a serrated knife. Now allow to cool further.


THERMOMIX ® RECIPE

Place almonds into bowl and grind 10 seconds speed 9. Set aside.

Place sugar in the mixing bowl and grind 10 seconds speed 9. Remove from bowl and then tip 65g back in to the bowl.

Add butter to the bowl and mix 20 seconds speed 6. Scrape down side of the bowl and mix 10 seconds speed 6..

Add flour, almond meal and 1 tsp cinnamon to the bowl and mix 20 seconds, speed 6 using the spatula to encorporate. Check that a dough has formed. if not mix another 10 seconds, speed 6.

Roll teaspoons of mixture into a ball, place onto prepared baking trays leaving space between biscuits to allow for spreading. Bake at 180 degrees for 14 - 16 minutes or until firm to touch or light in colour.

Mix the remaining icing sugar with 1/2 tsp cinnamon in a bowl. While biscuits are still hot, roll the biscuits in the spiced icing sugar and place on a wire rack to cool.
