Omni Nashville Hotel, a newly opened luxury hotel in the heart of Nashville, Tenn., is embracing the growing culinary scene of the city by opening four different food and drink venues within its premises.

The hotel’s signature restaurant Kitchen Notes is headed by executive chef David Harker, who has created breakfast, lunch, and dinner menus featuring regional cuisine with a contemporary spin, using the freshest local ingredients. The highlight at Kitchen Notes is the breakfast, where diners can choose from the Omni brand’s Art of Breakfast Buffet or additional à la carte options. The specialty here is a rotating biscuit bar, offering at least four different kinds of homemade biscuits every day, including sweet seasonal biscuits like cherry-chocolate and savory biscuits like maple-bacon, as well as a gluten-free option. For toppings, diners can choose from at least three varieties of honey, assorted jams and preserves, at least two kinds of butter, Cornish cream, country ham, and a daily country gravy — all made with locally or regionally sourced ingredients and produce.

"We took great care to create a special culinary experience at this hotel," David Morgan, Omni vice president of food and beverage, said in a press release. "We serve our guests a genuine choice of food and drink with origins deeply rooted in Nashville, but whose preparations are contemporary and uniquely ours."

For guests looking for a fine dining experience, the hotel’s other restaurant, Bob’s Steak & Chop House, offers "premium steakhouse fare in a classically elegant setting," according to the press release. Serving all-organic coffee and pastries, Bongo Java — a popular Nashville coffee house founded in 1993 — has also opened up its fourth Nashville location at the Omni hotel.

In the evenings, Barlines — the hotel’s bar and music venue space — offers a selection of cocktails, 21 Tennessee whiskeys, and live music from local artists. Barlines will also offer bar snacks such as Grand Ole hot wings, Southern fried pickles, and Sweetwater Valley pimento and artichoke dip.

You should definitely have breakfast at Kitchen Notes. Like most hotel restaurants, they have a breakfast buffet, but Kitchen Notes' includes a biscuit bar! They also have a biscuit sandwich section on their menu. Great spot for breakfast.

Visit was during a holiday and the menu was limited so I couldn't really tell if the food was good. I just had a burger.

We were a group of 10 and were given a large private room at the end of the restaurant which was terrific because it was quiet, intimate and huge picture windows. In the Omni Hotel next to the Country Music Hall of Fame and the new Convention Center. Near the Honky Tonk, you get free validated parking and there are other bars in the Omni with music that is worth visiting. Enjoyed the food and the outstanding service.

Great biscuits and farm to table food choices. Breakfast buffet is awesome. Restaurant is light and airy, yet has a very warm country feel to it.

We enjoyed multiple breakfasts here during our stay. Ultimately, it was the most convenient spot since we were staying at the Omni. Service was a little slow, but the were incredibly nice. The food was very good and the buffet was great, if a little overpriced. Kept going back if that says anything about it!

We stayed in the Omni and the bitter cold made this our ‘go to’ during our stay, but no complaints! The shrimp & grits, patty melt, salads and chicken & field pea soup were all delicious and plentiful. We also had the breakfast & brunch buffets which were both delicious with fantastic omelets to order. The cinnamon biscuits are pretty tasty! Oh, and gluten free biscuits that weren’t hard & dense! However, I would preferred creamy grits on the buffet, cheesy grits. one morning the grits looked like they had been forgotten and not stirred in hours! If you are of short stature, avoid the tables with dining benches as they are deep and I found it hard to comfortably reach my food. Overall, highly recommend!

With its contemporary Art Deco motif, the sun-drenched corner of Marsh House at the base of the Thompson Nashville hotel is a buzzy daytime spot. It helps that the restaurant serves brunch every day &mdash both hotel guests and locals can find their ideal midday meal here, whether that be Johnnycakes with salmon and crème fraiche or the Broken Yolk sandwich set between slices of brioche with belly ham, smoked onion, kale, and pickled peppers. Pastry chef Lisa Marie White melts hearts with her cast-iron cinnamon rolls and crème brûlée croissants. And, from Friday through Sunday, the offerings amp up with bottomless Champagne.

Geist

The exposed brick and wooden beams at Geist reveal the historic building&rsquos original use as a blacksmith shop, and also provide a charming retreat. There&rsquos a champagne garden on the patio, open year-round, and on Saturdays and Sunday from 10 a.m. to 3 p.m., the restaurant does a fine list of brunch fare. Start with a prosecco mimosa before moving on to lox on a house bagel with caper cream cheese, or a meat and cheese board loaded with a broad selection of cured slices. From there, go with the shrimp and grits topped with a poached egg or the eggs benedict with house-cured ham &mdash both are hearty and satisfying.

Chaatable

Like the streets of India where chef Maneet Chauhan and her husband, Vivek, drew their inspiration, Chaatable is a busy, colorful world where good aromas mingle in the air. It&rsquos a casual space with a u-shaped bar and thousands of thin bangle bracelets decorating one wall. They serve brunch on Saturdays and Sundays, offering a menu that&rsquos balanced with both sweet and savory options, some of which are familiar brunch dishes that get an Indian spin. So, avocado toast is amped up with mint and tamarind eggs are wrapped in a crispy potato coating and aromatic saffron French toast is laced with garam masala caramel. Add a Karma coffee for a relaxing buzz.

8th & Roast

8th & Roast has been roasting and brewing coffee for Nashvillians for years on the south side of town they recently added a second location on Charlotte Avenue where you can now find brunch every day from 7 a.m. until 2 p.m. To go alongside their selection of coffees roasted in-house, find a made-to-order list of dishes, like a bowl of loaded stone-ground grits mixed with stewed tomatoes, bacon, cheese and herbs. Stateside Kitchen

Born by a team of coffee experts, Stay Golden delivers on its name, with a full-service restaurant, coffee bar, on-site roastery and even a cocktail bar on the second floor. Meticulous in brew methods, the team pours an excellent cup &mdash go with their rotating seasonal espresso or ramp things up with a coffee cocktail, like the Through the Woods, made with Matchless Coffee Soda and gin. The chef-driven menu means that dishes change seasonally, but you can&rsquot go wrong with the savory leavened waffle drizzled with hot honey butter and hickory syrup and topped with an egg, or the brunch burger, made with beef from local outfit Porter Road Butcher and topped with a fried egg, bacon and Dijon remoulade.

Saltine

With hints of Creole and Gulf coast influence, the menu at Saltine is seafood-heavy and full of flavor and spice. Grab a seat inside the sprawling dining room where a modern nautical motif includes the long tentacles of an octopus painted along the walls. During brunch on Sundays from 11 a.m. to 2 p.m., you can start with a platter of raw oysters, most of which come from the Gulf, before tucking into entrees like a blue crab and asparagus scramble, which gets a ladle of hollandaise and a side of potatoes, or an omelet loaded with shrimp and avocado.

Sinema Restaurant + Bar

Set in a historic 1940s-era theater, Sinema lives up to its locale. A grand lobby with a curved staircase leads to an upstairs bar and dining room, and velvet tufted booths and exposed brick walls can be found throughout. Weekends find the place bustling from 10 a.m. to 2 p.m., which is when they offer bottomless brunch. Stations are set throughout the space, each with its own bounty: a biscuit bar with seemingly endless toppings, a decadent waffle bar on the second floor, a panini station and more. You can also order off the menu for chilaquiles or Fruity Pebbles French toast. Also bottomless? The extravagant Bloody Mary and mimosa bars on each floor.

Chef Deb Paquette is known for reaching broadly and beyond flavor boundaries to create inspired dishes. At her Green Hills restaurant, etc., brunch is an affair. There&rsquos orange-fig bread with ginger goat cheese to start. Then it&rsquos on to the show-stoppers: A gluten-free pecan waffle with coconut yogurt and grilled pineapple crab cakes topped with a poached egg, hollandaise, and a tuft of greens coated in a sauce of poblano and pumpkin seeds and a bistro steak and eggs with dots of red gravy and a side of chimichurri potato hash. If there&rsquos room for more, indulge with frozen baby doughnuts dipped in a warm mocha-spiced sauce.

Construction is up to the 12th level on the 30-story Omni Hotel complex being built in downtown Louisville.

In an update on the massive project, city officials and project managers on Tuesday said in a release that "the new hotel will literally change our skyline. It will be the tallest hotel, and third-tallest building in the city."

The project in the block at Third and Liberty streets has about 200 workers on site most days, primarily concrete workers and electricians at this point.

The officials said that "so far, the project has used 42,000 cubic yards of concrete – the equivalent of 4,600 concrete truck loads. To date, 6.2 million pounds of structural steel has been used."

When complete next year, the project will have 1.2 million square feet of space.

Omni Hotel corporate officials have put the project's cost at more than $300 million. The complex will feature a 612-suite, four-diamond Omni hotel, 225 posh apartments, an 820-space garage, a 20,000-square-foot grocery, street level shops, 70,000 square feet of meeting space, gallery space and three restaurants, including a Bob's Steak & Chop House.

Among many hotel amenities will be a speakeasy with four bowling lanes, a fitness center, and a rooftop cafe, spa, swimming pool, and bar.

Mayor Greg Fischer said in remarks prepared for the media briefing that "while we’re very excited about the Omni Louisville itself, we’ve been even more interested in the ripple effects that this kind of investment creates. We don’t have to look far to see the kind of impact a downtown Omni can have on a thriving city.

"The Omni Nashville opened three years ago, and it has smashed expectations for events and occupancy. At the same time, Nashville as a whole has enjoyed a boom in tourism and hospitality businesses."

He added, "Like Nashville, Louisville is a city on the move – both are growing as tourism destinations, especially for leisure travel."

Fischer also plugged the $200 million-plus renovation and expansion of the nearby Kentucky International Convention Center currently in progress.

He said that, "the bottom line – a downtown Omni hotel, especially one tied to a modern convention center, creates growth opportunities far beyond this block. The Omni Louisville is good for our entire city, because it attracts more visitors, more conventions, and more buzz for Louisville."

Fischer noted that the Omni development is already paying off.

"Just last week we announced that a major sports conference, the Travel Events and Management in Sports, or TEAMS, will return to Louisville in fall 2018. They’ll bring 1,200 visitors and $1.3 million in direct economic impact," he said. "The conference leaders pointed directly to these facilities … the renovated Kentucky International and the new Omni Louisville as key factors in their decision."

Eamon O'Brien, the Omni director of sales and marketing, said, "Whether you’re talking about the lobby, the library bar, the restaurants, or the guest rooms, every bit of the Omni will reflect Louisville’s unique culture, heritage, and history.

"Omni Louisville brings all these elements together in one place – along with residential units, a much-needed downtown grocery, and a spa. We are really transforming what life in downtown Louisville will look like."
